Oyster Sauce Eggplant Stir-Fry Ingredients- 2 eggplants
- 102g onion (approx. 1/2 medium onion)
- 33g green onion (approx. 1/4 stalk)
- 1 Tbsp minced garlic
- 0.7 Tbsp sesame oil (approx. 1/2 Tbsp)
- 5 Tbsp grapeseed oil
- A pinch of toasted sesame seeds

Cooking Instructions
Step 1
First, thoroughly wash the eggplants under running water, gently rubbing them with your hands. Trim off both ends, then cut each eggplant in half lengthwise. Slice them into approximately 2-3mm thick pieces. While the exact shape and thickness are flexible, try to avoid cutting them too thick or too thin for optimal texture.
Step 2
Finely chop the green onion (33g). Slice the onion (102g) into thin strips, about the same thickness as the eggplant slices. Have 1 Tbsp of minced garlic ready; this will make the cooking process smoother.
Step 3
In a stir-fry pan, add 1 Tbsp of minced garlic and 5 Tbsp of grapeseed oil. Cook over medium heat until fragrant, about 1-2 minutes. This step infuses the oil with garlic flavor, enhancing the overall taste of the dish.

Once the garlic is fragrant, add the sliced onion and eggplant to the pan. Continue to stir-fry over medium heat, gently tossing the ingredients, until the eggplant becomes tender and slightly translucent.
