Main Ingredients

  • 220g Vegetable Square Fish Cakes (approx. 1-2 packs)
  • 20g Carrot (approx. 1/5 of a medium carrot)
  • 20g Zucchini (approx. 1/10 of a medium zucchini)
  • 20g Shiitake Mushrooms (2-3 dried shiitake or 1 fresh shiitake mushroom)

Seasoning

  • 2 Tbsp Soy Sauce (Jin Ganjang)
  • 1 Tbsp Mirin (Rice Wine)
  • 1 Tbsp Minced Garlic
  • 0.5 Tbsp Black Pepper
  • 1 Tbsp Sesame Seeds
  • 1 Tbsp Canola Oil
  • 1.5 Tbsp Soy Sauce for Seafood (Gae Ganjang) or Regular Soy Sauce (Guk Ganjang)
  • 1 Tbsp Agave Syrup (or Corn Syrup/Sugar)
  • 0.5 Tbsp Pepper (adjust to taste)

Cooking Instructions

Step 1

First, cut the fish cakes into bite-sized pieces (about 2×4 cm). Prepare the carrot, zucchini, and shiitake mushrooms by slicing them to a similar size or slightly smaller than the fish cakes. If using shiitake mushrooms, remove the stems and slice them thinly.

Heat 1 Tbsp of canola oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and stir-fry until fragrant. Be careful not to burn the garlic; the goal is to infuse the oil with a gentle garlic aroma.

Once the garlic is fragrant, add 2 Tbsp soy sauce, 1.5 Tbsp seafood soy sauce (or regular soy sauce), 1 Tbsp mirin, and 1 Tbsp agave syrup to the pan. Bring the mixture to a boil over medium heat to create the sauce. Once boiling, reduce the heat slightly.

While the sauce is simmering, add the sliced carrots and vegetable fish cakes to the pan. Stir-fry over medium heat for 2-3 minutes, allowing the fish cakes to absorb some of the sauce.

Once the carrots begin to soften slightly, add the zucchini and shiitake mushrooms. Continue to stir-fry until all the ingredients are tender, about another 2-3 minutes. Avoid overcooking the zucchini and carrots, as they can become mushy.

Finally, add 0.5 Tbsp pepper and 1 Tbsp sesame seeds. Stir gently to combine everything evenly and complete the dish. You can adjust the amount of pepper to your liking. (Tip: Instead of green onions, using colorful vegetables like carrots, zucchini, and shiitake mushrooms not only adds visual appeal but also enhances the overall flavor and texture!)
