  • Tofu (for stew) 380g (1 block)
  • Green onions, a small amount
  • Onion, 1/2

Seasoning

  • Chanmaru Sichuan Mapo Tofu Sauce (1 pack)

Cooking Instructions

Step 1

Let’s get started with preparing the tofu for our delicious Mapo Tofu! First, cut the tofu into bite-sized cubes, about 1.5 cm. Cutting them too small might cause them to break apart during cooking, so aim for a nice, substantial size.

Here we have one pack of Chanmaru Sichuan Mapo Tofu Sauce. (The package is typically for 200g, but we’re using the entire 380g block of tofu.) Following the package instructions, add 3 tablespoons of water to adjust the sauce’s consistency. You can adjust the water amount to your preference.

Now, let’s prepare the aromatics. Finely chop the green onions and mince the onion. In a pan, add the chopped onion and green onions, and sauté over medium heat for about 3 minutes until fragrant. Sautéing them until they become slightly translucent will enhance the flavor.

Add the prepared tofu and the Mapo Tofu sauce to the pan with the sautéed aromatics. Gently stir everything together, being careful not to break the tofu, until all ingredients are well coated with the sauce. Once it starts to simmer, cook for another 2-3 minutes until the Mapo Tofu is beautifully finished. (A personal note: My preferred Mapo Tofu involves large pieces of fried tofu with a bold, spicy sauce, often served with fried eggplant. This recipe offers a simpler approach but is still very enjoyable!)
