Today, we’re making a delicious diet-friendly dish, Curry Stir-Fry Noodles, using low-calorie tofu noodles. 🙂 They’re a fantastic way to satisfy your noodle cravings without the guilt!
Ingredients- 100g Tofu Noodles
- 200g Beef (sirloin or chuck recommended)
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1 Green Bell Pepper
- 1/2 Onion
- 50g Curry Powder
- 1 Tbsp Minced Garlic
- Pinch of Black Pepper
- Pinch of Salt
- Olive Oil, as needed
- 200ml Water
Cooking Instructions
Step 1
First, prepare the vegetables. Core the red and yellow bell peppers and the green bell pepper, then cut them into bite-sized cubes. Dice the onion similarly.
Step 2
Pat the beef dry with paper towels to remove excess moisture. Then, cut it into cubes, slightly larger than the vegetables. This helps maintain its shape and adds a pleasant chewiness when stir-fried.
Step 3
Marinate the beef by adding 1 tablespoon of minced garlic, a pinch of black pepper, and a pinch of salt. Mix well and let it rest for about 10 minutes to allow the flavors to meld. This step helps remove any gamey smell and enhances the beef’s flavor.
Step 4
Drain the tofu noodles thoroughly in a sieve and rinse them under clean running water. Draining them well is crucial to prevent them from becoming mushy or clumping together during cooking, ensuring a perfectly chewy texture.

Now, let’s make the curry sauce. In a bowl, combine 50g of curry powder with 200ml of cold water. Whisk or stir until the powder is completely dissolved and smooth, ensuring there are no lumps. A smooth sauce base is key.

Heat a little olive oil in a pan over medium-high heat. Add the marinated beef and stir-fry until the surfaces turn golden brown. Cooking it quickly over high heat will help seal in the juices.

Once the beef is partially cooked, add all the prepared diced vegetables to the pan. Stir-fry together for about 2-3 minutes until the vegetables are slightly softened and well combined with the beef.

Pour the pre-dissolved curry sauce into the pan. Stir well to coat all the ingredients evenly with the sauce. Continue to stir-fry for a minute or two until the sauce thickens slightly.
Step 9
Finally, add the star of our dish, the drained tofu noodles, to the pan. Stir everything together so the noodles are well coated with the curry sauce.
