Delicious Kimchi Fried Rice

I made a hearty meal with delicious Kimchi Fried Rice after a long time! Stir-frying savory bacon and crisp kimchi in fragrant onion oil made it wonderfully rich and tasty. Adding chewy nobashi shrimp doubled the flavor, it felt like. Topping it with a sunny-side-up egg created a visually appealing and delicious ‘elegant solo meal’ for myself.

Main Ingredients

  • 1 bowl of cooked rice
  • 1 cup of well-fermented kimchi
  • 3 strips of bacon
  • 10 nobashi shrimp (thawed)
  • 1/2 stalk of green onion
  • 1 egg

Seasonings & Other Ingredients

  • 2 Tbsp onion oil
  • 1 Tbsp sesame oil
  • Pinch of black pepper
  • Sesame seeds

Cooking Instructions

Step 1

First, prepare all the vegetables and ingredients. Finely chop the green onion. Cut the bacon and kimchi into bite-sized pieces. Thaw the nobashi shrimp.

Heat 1 tablespoon of onion oil in a frying pan over medium-low heat. Add the chopped green onion and sauté until fragrant, infusing the oil with its aroma. Once the onion oil is fragrant, add the bacon and cook until golden brown and the fat renders.

When the bacon is partially cooked, add the chopped kimchi and stir-fry them together. Continue to cook until the kimchi softens and the flavors meld. Then, add the thawed nobashi shrimp and cook briefly until they turn pink. Once the shrimp are cooked, push all the ingredients to one side of the pan.

Add the remaining 1 tablespoon of onion oil to the empty space in the pan. Add the warm cooked rice. Use a spatula or spoon to break up the rice and stir-fry it, ensuring the seasoning is evenly distributed.

Combine the stir-fried ingredients and the rice from the side of the pan. Stir-fry quickly over high heat. Drizzle in 1 tablespoon of sesame oil, add a pinch of sesame seeds and black pepper, and mix well to finish.

For an attractive presentation, fill a rice mold or bowl with the fried rice, pressing it down firmly. Arrange the cooked nobashi shrimp on top of the rice.

Fry the egg sunny-side up and gently place it on top of the rice. For extra flair, sprinkle with parsley flakes if desired.
