Main Ingredients- 100g Glass noodles
- 2 sheets Fish cakes (eomuk)
- 1/4 Carrot
- 1 handful Spinach
- 50g Oyster mushrooms
- A little cooking oil

Step 1
Adding fish cakes to japchae enhances its savory flavor and chewy texture, making it much more delicious! Slice the rectangular fish cakes into bite-sized pieces (about 3-4 cm long).
Step 2
Heat a little cooking oil in a pan over medium heat and sauté the sliced fish cakes. Season them with a pinch of salt. Sautéing each vegetable ingredient individually with a little salt is a key secret to bringing out the best flavor in japchae.
Step 3
Julienne the carrot thinly for a vibrant color. While many people don’t particularly like carrots, they are essential for the beautiful appearance of japchae! Similarly, heat a little oil in a pan, season with a pinch of salt, and stir-fry.

Prepare the oyster mushrooms by removing the tough ends and separating them by hand. Sauté them in a lightly oiled pan. If a lot of water is released, don’t worry; simply drain the water and season the mushrooms with a pinch of salt while stir-frying.

Lightly stir-fry the spinach, which has been washed and drained, in a lightly oiled pan just until it wilts. Be careful not to overcook it, as it can become mushy.

In a large pot, bring plenty of water to a boil. Add the glass noodles and cook for about 7 minutes. Stir occasionally to prevent them from sticking together. Once cooked, drain the noodles in a colander, rinse them under cold water to remove excess starch, and set aside, ensuring they don’t clump.

Now it’s time to season all the ingredients beautifully. Combine the stir-fried vegetables, fish cakes, and cooked glass noodles in a large bowl or pot. Add 3 tablespoons of soy sauce and 1 tablespoon of sugar, and mix gently as if kneading. Ensure the noodles absorb the seasoning thoroughly. If more seasoning is needed, gradually add salt to taste. Finally, drizzle in 1 tablespoon of sesame oil for a nutty aroma. Your delicious japchae is now complete! (You can add a pinch of pepper if you like.)
