Main Ingredients- 200g Glass Noodles (Japchae noodles)
- 300g Bean Sprouts
- 140g Garlic Chives (or regular chives)
- 1/2 Onion
- 2 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 1 cup (200ml) Water
- 2 bowls Steamed Rice
Japchae Sauce- 1 Tbsp Oyster Sauce
- 6 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 2 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Cooking Wine (Mirin)
- Pinch of Black Pepper
- 1 Tbsp Oyster Sauce

Cooking Instructions
Step 1
First, prepare the glass noodles. Boil them in plenty of water for about 10 minutes until tender but still chewy. Avoid overcooking to prevent sogginess. Once cooked, rinse the noodles under cold water and drain well.

Now, let’s make the delicious japchae sauce. In a wide pan or wok, combine 1 cup (200ml) of water, 2 Tbsp sugar, 2 Tbsp cooking wine, 6 Tbsp soy sauce, 2 Tbsp oligosaccharide, 1 Tbsp oyster sauce, and a pinch of black pepper. Stir to combine, and bring the mixture to a boil over medium heat.
Step 3
Once the sauce starts to bubble, add the thinly sliced onion and the washed bean sprouts. Cook them together until the onions become translucent and the bean sprouts are slightly tender but still have a crisp bite. This should take about 2-3 minutes.
Step 4
When the bean sprouts are slightly wilted, add the garlic chives (cut into 6cm lengths) and cook briefly. Garlic chives cook very quickly, so don’t overcook them, or they might become mushy. Cook just until their vibrant green color intensifies.
Step 5
It’s time to add the cooked glass noodles! Add the drained noodles to the pan and stir-fry for about 2 more minutes, ensuring they are well coated with the sauce. This step allows the noodles to absorb the flavor, making them extra delicious. Keep the heat on medium-high and stir-fry quickly to prevent sogginess!
Step 6
Finally, just before turning off the heat, drizzle in 2 Tbsp of sesame oil. Stir well to distribute the nutty aroma throughout the japchae. This ensures your japchae is perfectly seasoned and won’t turn soggy!
Step 7
Place 2 bowls of warm steamed rice into serving bowls. Generously spoon the freshly made, mouth-watering japchae over the rice. Feel free to add extra vegetables if you like.
