Ingredients
  • Leftover Japchae
  • 1 bowl of cooked rice
  • Green onions (scallions)
  • 1/2 Tbsp Oyster sauce
  • Cooking oil

Cooking Instructions

Step 1

First, gently separate the leftover japchae with chopsticks or chop it into bite-sized pieces using a knife. This makes it easier to eat when mixed with rice.

Step 2

Wash and thinly slice the green onions. Heat about 1/2 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced green onions and gently stir-fry until their fragrance is released and they become fragrant, creating scallion oil. This step significantly enhances the flavor of the japchae-bap.

Step 3

Once the scallion oil is fragrant, add the chopped japchae to the pan and stir-fry quickly over high heat. Keep stirring with a spatula to prevent the japchae from sticking to the pan. Once the ingredients are well combined, add 1/2 Tbsp of oyster sauce for an extra layer of umami.

Step 4

Now, place 1 bowl of cooked rice evenly over the japchae. You can adjust the amount of rice to your preference.

Step 5

Mix the rice and japchae together and stir-fry briskly. It’s important to ensure that each grain of rice is evenly coated with the delicious japchae seasoning. Stir-fry over high heat for about 1-2 minutes.

Step 6

Spread the stir-fried japchae-bap nicely in the serving bowl. Let it sit on the bottom of the pan for about 20 seconds to create a slightly crispy, almost crust-like texture. This step is optional but adds another dimension to the taste of the japchae-bap.

Step 7

Your delicious and satisfying Japchae-bap is complete! Enjoy it immediately while it’s warm for the best flavor. Savor this wonderful meal made from your leftover holiday delicacies!
