Main Ingredients
  • 150g soaked glass noodles
  • 1/3 onion
  • 30g carrot
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 50g julienned bamboo shoots
  • 50g julienned shiitake mushrooms
  • A handful of chives

Seasoning & Others
  • 1 Tbsp chili oil
  • 1 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • 1 Tbsp sliced scallions
  • 1 tsp sugar
  • 1 tsp MSG (optional)
  • Pinch of black pepper
  • A little sesame oil
  • 2/3 cup water or broth

Cooking Instructions

Step 1

Prepare the vegetables: Julienne the onion, carrot, green bell pepper, and red bell pepper into thin strips about 3mm thick. Also, julienne the shiitake mushrooms and bamboo shoots. Cut the chives into manageable lengths for adding at the end. If using thinly sliced pork, lightly blanch it and set aside. For the dried glass noodles, soak them in cold water for about 1 hour until they become pliable and soft.

Step 2

Heat 1 Tbsp of chili oil in a large pan or wok over medium-low heat. Add 1 Tbsp of sliced scallions and 1 Tbsp of minced garlic. Sauté until fragrant, being careful not to burn them. Once the aroma is released, add 1 Tbsp of soy sauce and let it simmer briefly.

Step 3

Add all the julienned vegetables (onion, carrot, bell peppers, bamboo shoots, shiitake mushrooms) and the prepared pork (if using) to the pan. Turn the heat up to high and stir-fry quickly until the vegetables are slightly softened.

Step 4

Stir-fry for about 1-2 minutes, ensuring the vegetables retain a slight crispness rather than becoming mushy.

Step 5

Pour 2/3 cup of water or broth into the pan with the stir-fried vegetables. Add 1 tsp of sugar and 1 tsp of MSG (optional). Stir well to combine the flavors. MSG is optional and can be omitted if preferred.

Step 6

Drain the soaked glass noodles thoroughly and add them to the pan. Toss everything together to ensure the noodles are coated with the sauce.

Step 7

Continue to cook over high heat, stir-frying until the glass noodles absorb the sauce and become tender. They will turn translucent when cooked through.

Step 8

Once the glass noodles are translucent and cooked, season with a pinch of black pepper and a drizzle of sesame oil for added fragrance. Finally, add the chopped chives and stir-fry for another quick moment to keep them fresh and vibrant.

Step 9

Serve a generous portion of warm rice in a bowl. Spoon the freshly stir-fried japchae mixture on top of the rice to create a delightful Japchae-bap.
