Delicious Instant Tteokbokki (Spicy Rice Cakes) Made at Home
The Ultimate Instant Tteokbokki Recipe with the Perfect Golden Ratio
I love tteokbokki so much that I often buy it or make it myself. Instant tteokbokki, cooked and enjoyed bubbling hot, is exceptionally delicious! It’s perfect as a snack with soju or as a hearty meal. I’m sharing my secret recipe for instant tteokbokki that rivals restaurant quality.
Tteokbokki Ingredients- 450g Miltteok (short grain rice cakes for tteokbokki)
- 4 sheets of fish cakes (eomuk)
- 1/6 head of cabbage
- 1/2 onion
- 1 stalk of green onion
- 1 cup mozzarella cheese
- 8 frozen dumplings
- 1 packet of ramen noodles
- 1L anchovy-kelp broth (or water)
Spicy & Sweet Sauce- 2 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp gochujang (Korean chili paste)
- 3 Tbsp soy sauce
- 3 Tbsp sugar
- 1 Tbsp minced garlic
- 100ml water (for adjusting sauce consistency)

Cooking Instructions
Step 1
First, prepare the vegetables. Coarsely chop the cabbage and slice the onion into thick strips. Cut the fish cakes into bite-sized pieces (triangles or squares).
Step 2
For a chewy texture, soak the rice cakes in cold water for at least 10 minutes. This prevents them from becoming hard and helps them absorb the sauce better.
Step 3
Let’s make the sauce that determines the flavor of your instant tteokbokki! Combine gochugaru, gochujang, soy sauce, sugar, and minced garlic in a bowl. Add 100ml of water and mix well until the sugar dissolves.
Step 4
Prepare a wide pot or hot pot. Spread the chopped cabbage and sliced onions evenly on the bottom of the pot. This allows the vegetables to release their natural sweetness, enriching the tteokbokki broth with a deeper flavor.
Step 5
Place the prepared sauce over the vegetables. Arrange the soaked rice cakes, cut fish cakes, and green onion attractively on top. Pour in the anchovy-kelp broth until the ingredients are submerged. Bring to a boil over high heat. Once boiling, add the ramen noodles and dumplings to cook together. Be careful not to overcook the noodles.
Step 6
After enjoying the tteokbokki, add cooked rice and mozzarella cheese to the remaining sauce and stir-fry. Continue to cook until the rice becomes slightly crispy and the cheese is melted and gooey. Letting it stick to the bottom of the pot creates a delicious, slightly scorched layer of rice, like a flavorful crust! Scrape every bit off with your spoon – it’s incredibly tasty. You can also add seaweed flakes or a drizzle of sesame oil for extra flavor, if desired.
