For those managing a diet, it’s often said that eating one or two meals a day is ideal. I’m currently enjoying a balanced approach to maintaining my health without sacrificing enjoyment. Yesterday, unexpectedly, after breakfast, I had two Moncher chocolates and a carton of soy milk. By evening, my mouth felt dry and bitter. Later, while my partner was having dumplings, I also had two. After falling asleep, I woke up to start the day with more Moncher and ramen. Once I regained my senses, I decided to make a hearty one-dish meal: ‘Omurice’!

Main Ingredients

  • 1-2 bowls of warm cooked rice
  • 1/4 zucchini
  • 1/4 carrot
  • 1/4 onion
  • 1/2 can Spam (or ham)
  • 1 Tbsp oyster sauce
  • 3 eggs
  • 2 Tbsp milk
  • Cooking oil, as needed
  • Parsley flakes, for garnish

Omurice Sauce

  • 6 Tbsp ketchup
  • 3 Tbsp soy sauce
  • 2 Tbsp sugar
  • 0.5 Tbsp minced garlic (approx. 1/2 tsp)

Cooking Instructions

Let’s start by preparing the filling for the omurice. Finely dice the zucchini (seeds removed if necessary), carrot, and onion into approximately 0.5cm pieces. Dice the Spam similarly. (Tip: If you use a food processor to dice the Spam, it might become too finely minced. It’s recommended to chop it by hand with a knife for better texture.)

Heat a frying pan over medium heat with a generous amount of cooking oil. Add the diced zucchini, carrot, onion, and Spam. Stir-fry until the vegetables become translucent and tender. This process will bring out the natural sweetness of the vegetables and enhance their flavor.

Add the warm cooked rice to the pan with the sautéed vegetables and Spam. Use a spatula to break up any clumps of rice and mix everything evenly. Ensure the rice is thoroughly combined. Stir in the oyster sauce (slightly less than 1 Tbsp) for an umami boost, and continue to stir-fry the rice. It’s important to cook the rice so that each grain is coated with flavor.

Now, let’s make the omurice sauce. In a small saucepan or pan, combine the ketchup (6 Tbsp), soy sauce (3 Tbsp), sugar (2 Tbsp), and minced garlic (0.5 Tbsp, about 1/2 tsp). Stir well and simmer over medium-low heat. If the sauce becomes too thick, gradually add a little water to reach your desired consistency. (A helpful addition: If you have tonkatsu sauce, adding a bit of it will create an even richer flavor!)

It’s time to make the egg omelet. In a bowl, crack the 3 eggs and add the milk (2 Tbsp). Adding milk will make the eggs more tender and fluffy. Whisk the eggs and milk together thoroughly with a fork or whisk. For an exceptionally smooth omelet, strain the mixture through a fine-mesh sieve to remove the chalazae (the white stringy bits).

Let’s try making the omelet style that my child requested. Even after a few attempts, I won’t give up! Heat a non-stick pan over low heat and lightly grease it with cooking oil. Pour in the egg mixture. Once the edges of the egg begin to turn a pale yellow, gently stir the egg in one direction with chopsticks or a spatula to create soft scrambled egg curds. When the egg is about 2/3 cooked, carefully fold it in half to form a crescent shape. (Tip: Tilting the pan slightly can help fold the egg over more easily. Practice makes perfect!)

Transfer the fried rice onto a serving plate, making it look appealing. Carefully place the prepared egg omelet on top of the rice. Make a slight cut in the center of the omelet and gently spread it open for a more attractive presentation. (It seems I didn’t use enough egg! I should use more next time.) Finally, generously drizzle the prepared omurice sauce over the top and sprinkle with parsley flakes, if desired. Your delicious omurice is now ready to be enjoyed!
