Even when dining alone, a meal should be prepared with care. While instant ramen used to be a quick fix, my body now needs something gentler as I get older. That’s why today, we’re making a simple yet hearty and delicious Tonkatsu Donburi, also known as Katsudon. This recipe, inspired by Chef Baek Jong-won’s popular style and enhanced with ‘refrigerator clean-out’ ingredients, is easy for anyone to follow. Nourish yourself with a satisfying meal amidst your busy schedule!

  • 3 Tbsp soy sauce
  • 9 Tbsp water
  • 2 Tbsp sugar (adjust to taste, as onions add sweetness)
  • 3 Tbsp mirin (sweet cooking wine)

Let’s start by prepping the vegetables. Peel and thinly slice half an onion. Chop the green onion finely. In a bowl, crack two eggs and gently beat them with a fork or chopsticks, ensuring the stringy bits are broken up for a smooth consistency.

Now, let’s make the delicious sauce that will elevate your Katsudon. In a small pot or pan, combine 3 tablespoons of soy sauce, 9 tablespoons of water, 2 tablespoons of sugar, and 3 tablespoons of mirin. Stir well.

This sauce gains a richer flavor profile when combined with the sweetness of the onions. If you’re using a generous amount of onion or prefer a sweeter taste, feel free to adjust the sugar quantity to your preference. Sweetness is all about personal taste!
