First, bring a large pot of salted water to a boil. Add your spaghetti and cook according to package directions, but aim for about 1-2 minutes less than the suggested time for a perfect al dente texture. To check if it’s ready, carefully remove one strand and taste it – it should be tender but still have a slight bite. Once cooked, drain the pasta using a colander. It’s a good idea to reserve about a cup of the pasta cooking water; this starchy liquid is excellent for adjusting the sauce’s consistency later.

Heat a large skillet over medium-low heat. Add a generous amount of olive oil, followed by the sliced garlic and bacon. Cook gently, stirring occasionally, ensuring the garlic doesn’t burn but instead infuses the oil with its aroma. Once the bacon starts to crisp and release its fat, and the garlic is fragrant and lightly golden, add the shrimp. If the oil splatters excessively, reduce the heat slightly.

As the shrimp turn pink and begin to cook through, add the drained spaghetti to the skillet. Toss everything together to coat the pasta with the garlicky, savory oil and cook until the shrimp are fully done. Stir frequently to ensure even cooking and to meld the flavors. If the pasta seems too dry, gradually add some of the reserved pasta water to create a smooth, emulsified sauce. Finish by seasoning with freshly ground black pepper to your preference. Your delicious Aglio e Olio is now ready to be served!
