Ingredients- 1 pack chicken breast (approx. 200g)
- 1/2 medium onion
- 10 peeled shrimp
- A little garlic chives (or green onions)
- 3 eggs

Cooking Instructions
Step 1
Heat a wide pan over medium heat. Add minced garlic and sauté until fragrant. Then, add the chicken breast, cut into bite-sized pieces, and cook until the surface turns white. (Using chicken breast instead of bacon makes this dish much lighter!)
Step 2
Once the chicken breast is partially cooked, add the thinly sliced onion and peeled shrimp to the pan and stir-fry together. Shrimp cook quickly, so only sauté them briefly. (Shrimp can be omitted if preferred, or replaced with other seafood.)

As the onions and shrimp begin to turn translucent, add the sliced king oyster mushrooms and sauté. Cutting all ingredients into similar sizes helps them cook evenly and makes for a visually appealing dish. Finely chopped garlic chives (or green onions) can be added now for an aromatic touch.

Once the ingredients are well sautéed, pour in the 300g of tomato sauce and mix everything thoroughly. If the sauce seems too thick, add 3 tablespoons of milk to adjust the consistency. Milk will soften the sauce’s flavor and add richness. Let it simmer over low heat for a short while to allow the sauce to thicken slightly.
Step 5
Taste and season with salt as needed. Generously sprinkle with coarsely ground black pepper to enhance the flavor. The peppery aroma pairs wonderfully with the tomato sauce.

Finally, sprinkle a generous amount of mozzarella cheese over the top, if using. The melted cheese will add a delightful richness. (For a lighter option, omit the cheese or use a low-fat variety.)

Carefully crack the 3 eggs into the pan, ensuring the yolks remain intact. Gently placing them on top of the other ingredients is key! The creamy texture of the partially cooked yolks is a highlight of this dish.

Cover the pan with a lid and cook over very low heat for about 5-7 minutes, or until the egg whites are set and the yolks are still runny (like poached eggs). Be careful not to burn it by keeping the heat very low. Serve this delicious Shakshuka warm with bread. For a diet-friendly option, pair it with whole wheat or rye bread.
