Delicious Ham and Egg Burrito

Tired of the same old sandwiches? Craving a quick and hearty meal? Ham and Egg Burritos are the perfect solution! You can even make a large batch, freeze them, and reheat them for an equally delicious treat. They’re perfect for breakfast or a light lunch.
Ingredients- 3 pieces Pita bread
- 1/2 Onion
- 1/2 Sausage (or ham)
- 1/2 cup Mushrooms (optional)
- 3 slices Butter (or 1.5 Tbsp)
- 3 Tbsp Tomato sauce
- 1/2 cup Shredded cheese (e.g., Mozzarella or Cheddar, to taste)
- 3 Eggs
Seasoning- Pinch of salt
- Pinch of pepper
- Pinch of dried parsley (for garnish)

Cooking Instructions
Step 1
First, prepare your vegetables. Finely slice the onion. Slice or finely chop the sausage (or ham) and mushrooms according to your preference. In a large bowl, crack the 3 eggs and add all the prepared vegetables.
Step 2
Add a pinch of salt and pepper to the egg and vegetable mixture. Whisk everything together until well combined and the egg mixture is smooth. You can also add a pinch of chopped parsley for extra flavor.
Step 3
Take your pita bread (or any other bread you have on hand). Spread a thin layer of tomato sauce on the inside of each piece of bread. This will add moisture and a tangy flavor.
Step 4
Heat 1 slice of butter (or about 1/2 Tbsp) in a non-stick pan over medium-low heat. Once the butter is melted, ladle about 2 spoonfuls of the vegetable-egg mixture into the pan, spreading it into a thin, circular shape. Avoid making it too thick.
Step 5
As the egg mixture begins to set and bubble slightly, sprinkle your desired amount of cheese generously over the top before it cooks completely. The melting cheese will add a delicious richness.
Step 6
Immediately after adding the cheese, carefully place a prepared pita bread (sauce-side down) on top of the egg and cheese. Gently press down with a spatula or your hand to help the bread adhere to the egg mixture, creating a unified filling.
Step 7
Once the egg is cooked and easily releases from the bottom of the pan, carefully flip it over. Adding another slice or two of butter to the pan as you flip will help the bread get golden brown and crispy, adding extra flavor. Cook the other side until golden.
Step 8
While still warm, fold the pita bread in half to form a half-moon shape. Press gently to seal. Cut in half, and your delicious Ham and Egg Burrito is ready to enjoy!
