Main Ingredients

  • 400g cleaned eel (fresh)
  • 1 stalk of green onion

Cooking Instructions

Step 1

Start by preparing your 400g of cleaned eel. Carefully trim any fins from the eel using kitchen scissors, as they can be sharp. Rinse the eel gently under cold running water to remove any slippery mucus. Pat it dry with paper towels for better handling.

Step 1

Step 2

Now, let’s make the flavorful sauce that will elevate your grilled eel. In a bowl, combine 3 tablespoons of gochujang, 2 tablespoons of cheongju (or mirin) to help remove any fishy odor. Add 1/2 tablespoon of minced ginger and 1/2 tablespoon of minced garlic for aromatic depth. Stir in 1/2 tablespoon of oligodang (or honey) and 1/2 tablespoon of sugar for a beautiful glaze and balanced sweetness. Whisk all ingredients together until smooth and well combined, ensuring there are no lumps.

Step 2

Step 3

Next, prepare the green onion to add aromatic notes. Wash 1 stalk of green onion thoroughly. Finely chop both the white and green parts separately. Heat a frying pan over medium heat and add 2 tablespoons of cooking oil. Sauté the chopped white parts of the green onion until they become fragrant and lightly golden. This step creates fragrant ‘green onion oil’ that enhances the eel’s flavor.

Step 3

Step 4

Once the green onion oil is fragrant, carefully place the dried eel pieces into the pan. Make sure the pieces do not overlap to ensure even cooking. Place the eel pieces skin-side down first for a crispier texture.

Step 4

Step 5

Cook the eel over medium heat, turning occasionally to prevent burning. Grill until both sides are golden brown and the eel is cooked through. Adjust the cooking time based on the thickness of the eel.

Step 5

Step 6

Now, prepare for the final flavor infusion. If using a cast iron skillet or a heavy-bottomed pan, arrange the chopped green parts of the green onion on the bottom of the pan before placing the eel on top. This allows the eel’s juices and sauce to meld with the green onion for an even richer flavor.

Step 6

Step 7

Carefully place the golden-brown grilled eel pieces on top of the bed of green onions in the pan.

Step 7

Step 8

Finally, generously brush the prepared eel glaze sauce over the eel using a basting brush. Reduce the heat to low to prevent the sauce from burning. Grill for another 1-2 minutes, allowing the sauce to slightly caramelize and coat the eel beautifully. Your delicious teriyaki-style grilled eel is ready to be enjoyed! Serve hot with perilla leaves or spicy kimchi for a delightful meal.
