How to Make a Vegetable Fried Rice Burrito!

I love making various things with tortillas! Today, I’m going to make a burrito. It’s a hearty and nutritious meal packed with flavorful vegetable fried rice.

Main Ingredients
  • 4 Whole wheat tortillas
  • 80g Spam
  • 200g Cooked rice
  • 50g Onion
  • 30g Red bell pepper
  • 30g Yellow bell pepper
  • 30g Green bell pepper
  • 12-16 Perilla leaves (깻잎)
  • 1 Egg
  • 20g Butter
  • Shredded mozzarella cheese, as needed

Seasonings & Sauces
  • 1 Tbsp Oyster sauce
  • 1 Tbsp Chili sauce
  • 3 Pinches Black pepper

Cooking Instructions

Step 1

First, prepare the vegetables for the burrito filling. Finely dice the red bell pepper (30g), yellow bell pepper (30g), green bell pepper (30g), and onion (50g). Rinsing them and ensuring they are dry before dicing will make them easier to sauté and help create a neat burrito shape.

Step 2

Next, dice the Spam (80g) into small cubes, about 0.5cm in size. Sautéing the Spam will add a savory depth that enhances the flavor of your fried rice burrito.

Step 3

Now, let’s stir-fry the vegetables. Melt 20g of butter in a preheated pan over medium heat. Once the butter is melted, add all the diced vegetables and sauté for about 30 seconds, just until they start to soften slightly. It’s important to keep the vegetables crisp.

Step 4

Once the vegetables are lightly sautéed, add 1 tablespoon of oyster sauce, 1 tablespoon of chili sauce, and 3 pinches of black pepper. Stir-fry for another 20 seconds until the seasonings are well combined with the vegetables. The combination of oyster sauce and chili sauce is wonderfully delicious!

Step 5

Add the diced Spam to the sautéed vegetables and mix gently. Then, add 200g of cooked rice. Stir and break up any clumps of rice with a spatula, ensuring that the rice is evenly coated with the seasoned vegetables and Spam. Cooking until the rice is well-integrated with the flavors is key.

Step 6

Prepare the tortillas for wrapping. Crack one egg into a bowl and whisk it lightly. Using a spoon or a brush, spread a thin, even layer of the beaten egg over the entire surface of each tortilla. The egg acts as a ‘glue,’ helping to seal the burrito and prevent it from opening.

Step 7

Now, assemble the burrito. On each tortilla spread with egg, place two perilla leaves to add a fresh aroma. Spoon a generous portion of the fried rice mixture over the perilla leaves, followed by a layer of mozzarella cheese. Alternatively, you can layer it as: perilla leaves, fried rice, cheese, more fried rice, and then more perilla leaves. The herbal notes of the perilla and the creamy cheese create a fantastic combination with the fried rice.

Step 8

Time to wrap the burrito tightly. Fold in the left and right sides of the tortilla towards the center to enclose the filling. Then, starting from the bottom edge closest to you, roll the tortilla up snugly. Place the rolled burrito seam-side down to secure it.

Step 9

Finally, grill the burritos until golden brown. Place the rolled burritos onto a preheated, dry pan over medium heat. Do not add any oil. Reduce the heat to low and cook for about 2-3 minutes per side, flipping occasionally, until the tortilla surface is a beautiful golden brown. This will result in a crispy exterior and a warm, flavorful interior. Enjoy your delicious fried rice burritos immediately while they are hot!
