How to Make Flavorful Flatfish Pancakes You Can Enjoy Year-Round
Transform any leftover flatfish sashimi from your fishing trips or generous purchases into delicious pan-fried pancakes. By frying and freezing them, you can enjoy this delightful dish anytime, preserving the fresh taste of the fish. While it might seem indulgent to fry precious sashimi, it’s an excellent way to store it when fresh fish can be tricky to keep. These crispy on the outside, tender on the inside flatfish pancakes make a wonderful side dish or a perfect accompaniment to drinks.
Ingredients- Flatfish sashimi (leftover)
- Eggs (adjust quantity based on the amount of fish)
- Pancake mix (adjust quantity based on the amount of fish)
- 1 pinch of salt (for egg wash)
- A pinch of black pepper (for seasoning the fish)
Cooking Instructions
Step 1
Prepare the leftover flatfish sashimi. If the fish has bones or skin, remove them. Slice the sashimi thinly on a diagonal, into bite-sized pieces (approximately 5×5 cm or 2×2 inches). Thin slices will ensure the pancake becomes crispier and more tender. Lightly season the sliced fish with a pinch of black pepper.
Step 2
Place a generous amount of pancake mix in a wide dish. Coat the seasoned flatfish slices evenly on both sides with the mix. Gently shake off any excess flour; this helps the egg wash adhere better and results in a crispier finish.
Step 3
In a bowl, crack the eggs and add a pinch of salt. Whisk thoroughly until well combined to create the egg wash. The salt helps to neutralize any fishy odor and adds a subtle seasoning.
