Easy Mini Hamburgers with Soft Morning Buns

Main Ingredients- 5 Morning Buns
- 1 Egg
- 1 handful Shredded Carrots (approx. 50g)
- 1 handful Shredded Onions (approx. 50g)
- 2 Tbsp Drained Tuna
- 1 handful Shredded King Oyster Mushrooms (approx. 50g)
- 1 handful Shredded Cabbage (approx. 50g)
- 1 Tbsp Mayonnaise
- 1 Tbsp Ketchup
- 1 Tbsp Pancake Mix
Cooking Instructions
Step 1
First, prepare the vegetables for the hamburger patties. Thinly shred the onions and carrots. Drain the canned tuna thoroughly. Thinly shred the king oyster mushrooms to a similar length.
Step 2
Lightly oil a pan and sauté the shredded carrots over medium heat for about 1 minute. Once slightly softened, add the shredded onions and cook for another 2 minutes until translucent. Transfer the sautéed vegetables to a large bowl to cool.
Step 3
In the same pan, add the shredded king oyster mushrooms and sauté for 2-3 minutes until their moisture evaporates and they turn golden brown. Add the sautéed mushrooms to the bowl with the other cooled vegetables.
Step 4
In the large bowl, combine the cooled sautéed onions, carrots, and mushrooms. Crack in 1 egg and add 1 tablespoon of pancake mix. Mix everything together thoroughly until well combined and the mixture starts to hold its shape. Kneading slightly will help it bind.
Step 5
Scoop out the mixture with a spoon, about one tablespoon at a time, and place onto a lightly oiled pan. Gently press down with the back of the spoon and cook over low heat until golden brown on both sides. Be careful not to burn by adjusting the heat. Cook for about 3-4 minutes per side until cooked through.
Step 6
This will yield approximately 7 hamburger patties. You can shape them into rounds or slightly flatten them.
Step 7
Prepare the salad. In a bowl, combine the thinly shredded cabbage with 1 tablespoon of mayonnaise and 1 tablespoon of ketchup. Gently toss until just combined. Avoid overmixing to prevent a raw taste.
Step 8
Prepare the 5 morning buns. Carefully slice them in half horizontally with a knife, being careful not to break them.
Step 9
Place a cooked hamburger patty onto the bottom half of each split morning bun.
Step 10
Top the patty with a generous spoonful of the prepared cabbage salad. The fresh vegetables add a balanced flavor.
Step 11
For an extra touch of flavor, you can cut a slice of cheese in half and place it on top of the patty in two of the buns. While optional, adding cheese enhances the taste. Your delicious morning bun mini hamburgers are now complete!
