Ingredients

  • 2 bowls of cooked rice (warm)
  • 2 eggs
  • 2 small green bell peppers
  • 1/4 medium onion
  • 1/3 medium carrot
  • 1/2 stalk green onion
  • 5 sausages (your choice)
  • 1/2 Tbsp oyster sauce (or soy sauce)
  • 1 tsp sesame oil
  • Pinch of salt (to taste)
  • Pinch of black pepper (to taste)
  • Cooking oil (or olive oil), for frying

Cooking Instructions

Prepare all your vegetables and ingredients by dicing them into small, bite-sized pieces suitable for fried rice. Finely mince the carrot, onion, and green bell peppers (about 2-3mm cubes). Chop the green onion. Dice the sausages similarly. Prepping the ingredients like this makes the stir-frying process much smoother.

Heat 1-2 tablespoons of cooking oil (or olive oil) in a pan over medium heat. Add the chopped green onion and diced sausages, and stir-fry until they become lightly golden and fragrant. Cooking the green onion and sausage in the oil will infuse it with their delicious flavors, greatly enhancing the fried rice’s taste. Once cooked, remove the green onion and sausage from the pan and set aside.

Add a little more oil to the same pan. Pour in the beaten eggs and scramble them until they are about 70% cooked. Then, add the warm rice. Use a spatula to break up the rice grains and stir-fry them together with the scrambled eggs. It’s crucial to stir and break up the rice clumps as you fry to ensure even cooking.

Once the rice and eggs are well combined and starting to fry, add the reserved sautéed green onions and sausages back into the pan. Stir-fry them together briefly. Now, add all the minced carrots, onions, and green bell peppers. Stir-fry over high heat until the vegetables soften slightly, but still retain some crispness. Avoid overcooking, as this can release excess moisture into the rice.

Finally, add 1/2 tablespoon of oyster sauce, a pinch of salt, and a pinch of black pepper. Stir-fry everything together until the seasonings are evenly distributed throughout the rice. Taste and adjust the seasoning if needed by adding more salt or oyster sauce. Finish by drizzling 1 teaspoon of sesame oil for an extra aroma. Your delicious egg fried rice is now complete! Serve hot for the best flavor.
