Main Ingredients- 2 cups ground pork (approx. 200g)
- 2 cups minced onion (approx. 200g)
- 1 cup minced carrot (approx. 100g)
- 1 Tbsp minced garlic (approx. 10g)
- 1/4 cup cooking oil (approx. 60ml)
- Pinch of black pepper
Seasoning- 1 packet instant curry powder (for 4 servings, approx. 100g)
- 1/3 Tbsp salt (approx. 5g)

Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to your curry. Mince the onions and carrots as finely as possible. Finely chopping the ingredients allows them to meld beautifully with the ground pork, resulting in a smoother and more delicious dry curry.

Step 2
In a wide pan, heat 1/4 cup of cooking oil. Add the ground pork. It’s crucial to cook the pork over low heat, breaking it up with chopsticks or a spatula to prevent clumping, ensuring it cooks evenly.

Step 3
Once the ground pork is mostly cooked and has changed color, add 1 Tbsp of minced garlic and sauté together. When the garlic becomes fragrant, sprinkle in some black pepper to eliminate any porky smell and enhance the flavor.

Now, add the 2 cups of minced onions to the pan. Sauté the onions with the pork until they become translucent. Well-sautéed onions will develop a strong sweetness, enriching the overall flavor profile of the curry.

Next, add the 1 cup of minced carrots and stir-fry. Notice the moisture simmering at the bottom of the pan from the vegetables? Increase the heat to medium or high and continue to stir-fry until all this moisture evaporates. This concentrates the flavors and gives the ingredients a drier texture.

Once the moisture has almost completely evaporated, add 1/3 Tbsp of salt and mix well. Seasoning with salt first makes it easier to adjust the overall taste after adding the curry powder.

Now it’s time to add the star ingredient: curry powder. Most instant curry powder packets are for 4 servings and weigh about 100g, so add the entire packet to the pan. Curry powder can clump easily, so make sure to break it up as you add it.

Step 8
Continue to stir and sauté for about 2-3 minutes, ensuring the curry powder coats all the ingredients evenly. This process creates your delicious dry curry! Once cooled completely, store the dry curry in an airtight container in the refrigerator for up to 2 weeks. It’s perfect served over rice as a curry rice bowl, or even used as a filling for sandwiches!
