Main Ingredients- 1 whole chicken (cleaned)
- 1/2 onion (cut into large pieces)
- 200g potatoes (peeled and cut into large pieces)
Spicy & Sweet Sauce- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp soy sauce
- 1/2 Tbsp maesilcheong (Korean plum syrup)
- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, to remove any gamey smell from the chicken, blanch it briefly in boiling water and then rinse it under cold water. This step helps to make the broth of the Dakbokkeumtang cleaner.
Step 2
In a bowl, combine 1 Tbsp gochujang, 2 Tbsp gochugaru, 1 Tbsp soy sauce, 1/2 Tbsp maesilcheong, and 1 Tbsp minced garlic. Mix these ingredients thoroughly to create a delicious sauce. It’s important to mix well so all the flavors meld together.
Step 3
Soak the large chunks of potato in cold water for about 10 minutes to remove excess starch. This prevents the potatoes from breaking apart too much while cooking and helps keep the broth clear.
Step 4
Place the blanched chicken, drained potatoes, and large pieces of onion into a pot. Add just enough water to cover about half of the ingredients. Be careful not to add too much water, as it can dilute the flavor of the sauce.
Step 5
If you prefer a spicier dish, add 1-2 large pieces of Cheongyang pepper (a type of Korean chili pepper). This will add an extra kick and a richer flavor profile.
