Delicious Curry Rice: A Recipe Using Up Leftover Vegetables

Do you often have small amounts of leftover vegetables after cooking? Usually, they’re chopped finely for fried rice, but this time, I’ve turned them into a delicious curry! Because the vegetables are finely chopped instead of large chunks, this curry is smoother and easier to eat, allowing you to enjoy more. Let’s make it simple!

Ingredients

  • 6 curry cubes (120g)
  • 5 button mushrooms
  • 1/3 carrot
  • 1/4 zucchini
  • 1/2 onion
  • 1/3 yellow bell pepper
  • 1/3 red bell pepper
  • 1/3 orange bell pepper
  • 182g pork loin for curry
  • Pinch of black pepper
  • 5 cups water

Cooking Instructions

Step 1

First, finely chop all the vegetables and meat for the curry. Chopping the vegetables into uniform sizes will ensure they cook evenly and absorb the flavors better.

I used pork loin purchased from the supermarket for the curry. I further cut the purchased loin into smaller, bite-sized pieces so it would be tender in the curry.

In a heated pot, add the chopped onion and pork loin. Sauté over low heat. You don’t need to add cooking oil; the moisture from the onion will gently cook the ingredients without burning.

Once the meat begins to cook, add a pinch of black pepper to eliminate any gamey smell. The pepper will enhance the meat’s flavor.

Now, add all the remaining prepared vegetables (mushrooms, carrot, zucchini, bell peppers) to the pot.

Continue to stir-fry over medium heat until the vegetables soften and wilt. As the vegetables cook down, their sweetness concentrates, making the curry even more delicious.

Once all the ingredients have softened, pour in 5 cups of water and bring to a rolling boil over high heat. Boiling rapidly ensures heat is evenly distributed to cook the ingredients quickly.

Prepare the curry cubes. The package usually indicates the water amount for 6 cubes (120g) is about 3.5 cups, but I personally prefer a thinner curry, so I used 5 cups of water. Feel free to adjust the water to your preference.

Once the mixture boils, reduce the heat to medium-low and add the curry cubes. Be careful to break them up and stir to prevent clumping.

Stir continuously with a spatula to ensure the curry dissolves completely and doesn’t stick to the bottom of the pot. Your delicious curry rice is now complete!
