Curry rice is a wonderfully approachable dish; once the ingredients are prepped, anyone can easily make it. With just a good quality curry powder or solid curry roux, success is practically guaranteed! This recipe makes it simple to create a rich and flavorful curry rice at home that rivals your favorite restaurant.

  • 1 medium carrot
  • 1 medium onion
  • 200g of your favorite meat (e.g., beef, pork, chicken breast)
  • 850ml water

Cooking Instructions

First, let’s prepare the ingredients that will form the foundation of our delicious curry. Wash the potatoes, carrot, and onion thoroughly. Dice them into roughly 1.5cm cubes. If you’re using meat, select your preferred type (beef, pork, or chicken) and cut it into bite-sized pieces, about 200g. For this recipe, we’re using tender chicken breast.

Heat a large pot or pan over medium heat. Add the diced potatoes and carrots, as they take longer to cook, and sauté them until they begin to soften and lightly brown. A little oil will help bring out their flavors. If using raw meat, add it now, about when the potatoes and carrots are one-third cooked, and stir-fry everything together until the meat is no longer pink. For chicken breast, add it at this stage and cook alongside the vegetables.

Once the potatoes and carrots are about halfway cooked, add the diced onion to the pot. Sauté the onions until they become translucent. Cooking the onions until they caramelize slightly will bring out their natural sweetness, adding depth to the curry.

When the onions are soft and translucent, pour in 850ml of water. This is the recommended amount for 6 servings, but feel free to adjust it based on the instructions on your curry powder or roux package. Bring the mixture to a gentle boil.

Once the water is simmering, add your curry powder or solid curry roux according to the package instructions for 6 servings. Solid curry roux tends to create a richer, deeper flavor, while curry powder offers more flexibility in adjusting the thickness. I personally prefer solid curry roux for its intense taste.

Whisk the curry powder or roux thoroughly, ensuring there are no lumps, and stir well to combine with the vegetables and meat. Keep stirring over medium-low heat for about 5 minutes, or until the curry begins to thicken. Stirring constantly prevents the curry from sticking to the bottom of the pot. You’ll soon smell that irresistible curry aroma!

When the curry has reached your desired consistency and the vegetables and meat are tender, turn off the heat. Here’s a secret tip for an even richer and smoother curry: Stir in 1 tablespoon of honey! The subtle sweetness of the honey balances any potential bitterness and enhances the overall flavor profile, making the curry incredibly velvety. Give it a final stir, and your delicious curry rice is ready! If you ever find your curry tastes a bit bitter, this honey trick works wonders to transform the flavor.
