Delicious Chungcheong-style Zucchini Noodles

I made a truly delicious Chungcheong-style zucchini noodle dish, featuring my husband’s favorite noodle dishes and zucchini, my favorite ingredient! It’s not only easy and simple but also incredibly tasty, making it a perfect recipe for everyday meals!
Main Ingredients- 2 handfuls of somyeon (thin wheat noodles)
- 1 zucchini
- 1/2 Tbsp salt (for salting zucchini)
- 3 Tbsp sesame seeds
- 1 Tbsp sesame oil
- 1/4 cup water
- 1 Tbsp cooking oil
Seasoning- 1 Tbsp red pepper flakes
- 1/2 Tbsp sugar
- 1/2 Tbsp minced garlic
- 2 Tbsp soy sauce
- Pinch of salt
- Pinch of black pepper

Cooking Instructions
Step 1
▷ Prepare all the ingredients for the Chungcheong-style zucchini noodles.
Step 2
▷ Julienne the zucchini, which is the key ingredient of this dish, into thin strips.
Step 3
▷ Place the julienned zucchini in a bowl, add 1/2 Tbsp of salt, and mix well. Let it sit for about 10 minutes to draw out moisture. Then, drain it in a sieve and gently press with paper towels to remove any remaining water.
Step 4
▷ While the zucchini is salting, combine all the seasoning ingredients (1 Tbsp red pepper flakes, 1/2 Tbsp sugar, 1/2 Tbsp minced garlic, 2 Tbsp soy sauce, a pinch of salt, and a pinch of black pepper) in a small bowl and mix thoroughly to create the seasoning sauce.

▷ Stir the seasoning ingredients well until they are fully combined, creating a flavorful sauce.
Step 6
▷ After salting the zucchini for about 10 minutes, drain it thoroughly in a sieve to remove excess water. Pat it dry with paper towels to ensure no moisture remains, which will prevent it from becoming soggy when stir-fried.
Step 7
▷ Heat a frying pan over medium-high heat and add 1 Tbsp of cooking oil. Add the drained zucchini and stir-fry over high heat for about 2 minutes until slightly tender but still crisp. Then, add the prepared seasoning sauce and stir-fry for another minute until the zucchini is well coated.
Step 8
▷ Pour in 1/4 cup of water and stir-fry for another minute. This will help the zucchini soften slightly and create a light sauce.
Step 9
▷ Add about 2-3 handfuls of somyeon noodles to boiling water and stir gently to prevent them from sticking. Cook the noodles until al dente, typically 3-4 minutes.
Step 10
▷ Once the noodles are cooked, immediately rinse them under cold running water to remove excess starch. Drain them thoroughly in a sieve to ensure no water remains. This step is crucial for achieving a firm, chewy texture.
Step 11
▷ Arrange the drained, chewy somyeon noodles attractively in a serving bowl. Top generously with the warm, stir-fried zucchini mixture.
Step 12
▷ Sprinkle 3 Tbsp of sesame seeds over the top for a nutty flavor and visual appeal.

▷ Drizzle 1 Tbsp of sesame oil over the noodles and zucchini for an added rich aroma and flavor.
