The Ultimate Fried Rice Recipe Using Chamdream Rice, Where Each Grain Shines
Rice cooked with lustrous Chamdream rice is delicious even when freshly served, but its flavor doubles when transformed into fried rice! Complete a wonderful meal with the harmony of a popping texture and abundant ingredients. This fried rice is perfect for special occasions, as well as a simple lunch or dinner. I’ll share the secret to making this exceptional fried rice.
Fried Rice Ingredients- 1 cup Chamdream rice
- 1/2 onion (finely chopped)
- 2 slices carrot (finely chopped)
- 16 shrimp tails (cleaned)
- 2 crab sticks or surimi sticks (shredded lengthwise)
- 1/2 king oyster mushroom (bottom trimmed, finely chopped)
- 3 green onions (chopped)
- 3 eggs
- 5 cloves garlic (thinly sliced)
Fried Rice Seasoning- 2 Tbsp soy sauce
- 2 Tbsp oyster sauce
- 1 Tbsp sesame seeds
- 2 Tbsp soy sauce
- 2 Tbsp oyster sauce
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
Let’s make delicious fried rice using Chamdream rice from Gyeonggi-do, where each grain stands out!
Step 2
First, rinse 1 cup of Chamdream rice thoroughly. It’s best to rinse it until the water runs clear. Once rinsed, put the rice in your rice cooker and cook it as you normally would. Freshly cooked, fluffy rice is the key to great fried rice.
Step 3
Prepare all the ingredients for the fried rice. Finely chop the onion and carrot. Clean the shrimp tails and shred the crab sticks lengthwise. Trim the bottom off the king oyster mushroom and chop it finely. Chop the green onions. Thinly slice the garlic for better aroma.
Step 4
Now, let’s start making the fried rice. Heat a pan over medium heat and add about 1 Tbsp of olive oil. Add the thinly sliced garlic and finely chopped carrots, and sauté until fragrant. The carrots will soften slightly and release their sweetness.

Push the sautéed carrots and garlic to one side of the pan and add a little more olive oil to the empty space. We’re going to make soft scrambled eggs. Pour in the beaten eggs and let them cook slightly before scrambling with a spatula for the best texture.

As the eggs begin to set, break them into bite-sized pieces with a spatula to create scrambled eggs. Avoid overcooking, as they can become dry. Mix them while they are still tender.

Add the prepared shrimp tails, chopped king oyster mushrooms, and onions to the pan and stir-fry together. Sauté until the vegetables are cooked through and their moisture is released. Stir-frying quickly over high heat helps preserve the crispness of the vegetables.

Now, add two bowls of the freshly cooked, fluffy Chamdream rice to the pan. Using a spatula, gently break up the rice and mix it with the other ingredients, being careful not to mash the grains.

Once the rice is mixed well with the ingredients, drizzle 2 Tbsp of soy sauce and 2 Tbsp of oyster sauce over the rice. Stir-fry thoroughly with the spatula, ensuring the sauces are evenly distributed among the rice grains. Keep the heat at medium during this step.

Add the shredded crab sticks to the pan and gently stir-fry them with the rice. Mix them in softly to avoid breaking them apart. The tender texture and sweet flavor of the crab sticks will add a wonderful depth to the fried rice.
