  • 1/2 Scallion (Green Onion)
  • 1 Red Chili Pepper
  • 1/2 cup Water (approx. 100ml)

Flavorful Sauce

  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy Sauce
  • 1/2 Tbsp Doenjang (Fermented soybean paste) – for savory depth!
  • 1 Tbsp Sugar
  • 1 Tbsp Cheongju (Rice wine) – to remove fishiness
  • 1 Tbsp Minced Garlic

First, prepare the vegetables. Thinly slice the onion. Cut the radish into quarters, similar in size to fit the pot, for even cooking. Slice the scallion and red chili pepper diagonally for a nice presentation and to help them absorb the sauce.

The key to delicious mackerel pike stew is the sauce! In a bowl, combine 2 Tbsp gochugaru, 1 Tbsp soy sauce, 1/2 Tbsp doenjang for that savory depth, 1 Tbsp sugar for sweetness, 1 Tbsp cheongju to eliminate any fishy odor, and 1 Tbsp minced garlic. Mix everything well to create a flavorful sauce base.

Now, let’s start cooking. Place the prepared radish pieces at the bottom of the pot. The radish will absorb the sauce as it cooks, becoming tender and complementing the fish perfectly. Arrange the sliced onions on top, followed by the star of the dish: the canned mackerel pike. Add the entire contents of the can, including the liquid, arranging the fish pieces neatly in the pot.

Spoon the pre-made sauce evenly over the mackerel pike. Then, carefully pour in 1/2 cup of water (approx. 100ml). You can adjust the water amount slightly depending on how saucy you prefer your stew.
