Main Ingredients- 2 fresh abalones
- 3-4 cloves garlic, minced (or 1/2 Tbsp minced garlic)

- 1 tsp butter
- Pinch of salt

Cooking Instructions
Step 1
First, use a clean toothbrush to scrub the bottom, suction-cup side of the abalone vigorously. This removes any surface impurities. Make sure to clean thoroughly, including the areas between the shell and the meat, and within the suction cups.
Step 2
Turn the abalone over and examine the underside of the shell. You’ll find a spot where a spoon can be inserted to help detach the meat from the shell. Aim for the side opposite the innards and gently slide a spoon underneath the abalone meat. With a slight leverage, the meat should detach easily from the shell.
Step 3
Once the abalone meat is separated from the shell, it’s time to remove the ‘beak’ or ‘teeth’. Locate the hard, white beak at the abalone’s mouth area. Use the tip of a knife or spoon to gently push and dislodge it. Removing this makes the abalone more pleasant to eat.
Step 4
Carefully separate the abalone meat from the innards. Slice the abalone meat into bite-sized pieces (e.g., about 0.5 cm thick). Set the innards aside separately (these can be used to make a delicious abalone porridge!).
Step 5
Heat a pan over medium-low heat and add 1 tsp of sesame oil. Add the minced garlic (3-4 cloves worth) and sauté. Be careful not to burn the garlic; the goal is to infuse the oil with a gentle garlic aroma.
Step 6
When the garlic is about halfway cooked and fragrant, add the sliced abalone (2 pieces) and 1 tsp of butter to the pan. Searing over medium heat works best, and do it quickly. Overcooking can make abalone tough, so cook for only about 2 minutes, or until the abalone changes color and the edges are lightly seared. Season with a tiny pinch of salt and pepper to enhance the flavor. Your flavorful butter-seared abalone is now ready! Serve immediately while warm.
