Main Ingredients
- Marinated Bulgogi 200g (store-bought or homemade)
- 1/2 Onion
- 1/3 Carrot
- 1 Green Onion
- 1/2 Enoki Mushroom pack
- 1 Egg
Cooking Instructions
Step 1
First, prepare the vegetables. Thinly slice the green onion diagonally. Peel and thinly julienne the onion and carrot. Trim the base of the enoki mushrooms and then gently pull them apart with your hands into smaller clusters. Prepping the vegetables beforehand helps speed up the cooking process!
Step 2
Heat a non-stick pan over medium heat without adding any oil. Add the marinated bulgogi and stir-fry until it’s fragrant and cooked through. Stir-frying without oil helps to enhance the natural flavors of the bulgogi.
Step 3
When the bulgogi is about halfway cooked and most of the red color has disappeared, add the rest of the vegetables (green onion, onion, and carrot) to the pan, except for the enoki mushrooms. Stir-fry until the vegetables are slightly softened. This allows the flavors of the bulgogi and vegetables to meld together beautifully.
Step 4
Once the onions and carrots begin to look slightly translucent and tender, add the prepared enoki mushrooms to the pan and continue to stir-fry. Enoki mushrooms cook very quickly, so be careful not to overcook them.
Step 5
When the enoki mushrooms are tender and wilted, crack the egg into a small bowl. Lightly beat the egg with a fork or chopsticks. Drizzle the beaten egg over the bulgogi and vegetables in the pan. Turn off the heat immediately as the egg begins to set. The residual heat will gently cook the egg, creating a delicious topping for the bulgogi.
Step 6
Serve a bowl of warm rice. Top the rice with the cooked bulgogi, vegetables, and the softly cooked egg. Finally, sprinkle some toasted sesame seeds over the top. Your delicious and satisfying bulgogi rice bowl is ready to be enjoyed!
