Main Ingredients- 5 medium potatoes
- 1 medium onion
- 2 Korean chili peppers (cheongyang peppers)
Flavorful Sauce- 6 Tbsp soy sauce
- 6 Tbsp sugar
- 1 Tbsp sesame oil
- 1 Tbsp cooking oil
- 1 Tbsp oyster sauce
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp minced garlic
- 2 cups (400ml) water
- 1/3 tsp black pepper
- 6 Tbsp soy sauce
- 6 Tbsp sugar
- 1 Tbsp sesame oil
- 1 Tbsp cooking oil
- 1 Tbsp oyster sauce
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp minced garlic
- 2 cups (400ml) water
- 1/3 tsp black pepper
Cooking Instructions
Step 1
First, wash the potatoes thoroughly and cut them into bite-sized pieces, about 2cm thick. Soaking the cut potatoes in cold water for about 5 minutes helps remove excess starch, preventing them from breaking apart during cooking. Slice the onion and thinly slice the Korean chili peppers diagonally, removing the seeds if you prefer less heat. You can leave the seeds in if you enjoy spicier food.
Step 2
The key to delicious braised potatoes is the sauce! In a wide bowl, combine 6 Tbsp soy sauce, 6 Tbsp sugar, 1 Tbsp oligosaccharide, 1 Tbsp oyster sauce, 1 Tbsp minced garlic, and 1/3 tsp black pepper. Whisk everything together until well combined to create a flavorful sauce. You can adjust the ratio of sugar and soy sauce to your preference.
Step 3
Heat 1 Tbsp cooking oil and 1 Tbsp sesame oil in a pan over medium heat. Add the drained potatoes and stir-fry for about 3-4 minutes until they become slightly translucent and begin to cook. This step enhances the depth of flavor in the braised potatoes.
Step 4
Once the potatoes are lightly stir-fried, add the sliced onion and chili peppers to the pan. Continue to stir-fry together for another 1-2 minutes, until the onions start to turn transparent.
Step 5
Pour the prepared sauce over the stir-fried potatoes and vegetables. Gently toss to ensure the sauce coats everything evenly.

Finally, add 2 cups (400ml) of water to the pan. Cover the pan and get ready to simmer.

Reduce the heat to medium and cover the pan. Let it simmer until the potatoes are fully cooked and the sauce has reduced to your desired consistency, about 10-15 minutes. Stir occasionally to prevent sticking and ensure even cooking. Keep an eye on the sauce to make sure it doesn’t burn.

Just before serving, sprinkle sesame seeds generously over the top for added flavor and visual appeal. This dish is absolutely delicious served hot with a bowl of rice! Leftover braised potatoes can be stored in an airtight container in the refrigerator for 2-3 days.
