Delicious Braised Eggs (Baek Jong Won Style)
Easy and Simple Baek Jong Won’s Braised Egg Recipe
An foolproof recipe from Baek Jong Won! With just one dish of braised eggs, you’ll finish a whole bowl of rice. ^^ Perfect for a quick and satisfying side dish.
Main Ingredients- 3 hard-boiled eggs (adjust quantity as desired)
- 1 red chili pepper
- 1 green chili pepper
- 2 pieces of dried kelp (dashima, approx. 5x5cm)
- 1 stalk of green onion
- 1/4 onion
Braising Sauce- 2 Tbsp soy sauce (jin-ganjang)
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1/2 Tbsp sugar (adjust sweetness to taste)
- 1 cup water (200ml)
- 2 Tbsp soy sauce (jin-ganjang)
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1/2 Tbsp sugar (adjust sweetness to taste)
- 1 cup water (200ml)
Cooking Instructions
Step 1
First, peel the hard-boiled eggs completely and set them aside. Place the peeled eggs neatly in a pot. Add the ingredients for the braising sauce: 2 tablespoons of soy sauce, 2 tablespoons of soup soy sauce, and 1/2 tablespoon of sugar. (Note: Chef Baek Jong Won’s original recipe uses 4 tablespoons each of soy sauce and soup soy sauce, and 2 tablespoons of sugar for 10 eggs. This recipe is scaled down for 3 eggs. Feel free to adjust the soy sauce or sugar amount to your preference.)
Step 2
Next, pour 1 cup (200ml) of clean water into the pot. Give it a stir to combine the sauce ingredients. This forms the base for your delicious braised eggs.
Step 3
To add more flavor, add the 2 pieces of dried kelp, 1 stalk of green onion (cut into large pieces), and 1/4 onion (also cut into large pieces) to the pot with the eggs and sauce. If you prefer a spicy kick, slice the red and green chili peppers in half, remove the seeds, and add them. This will make the broth more refreshing and slightly spicy.
Step 4
Now, bring the mixture to a boil over high heat for about 5 minutes. Once it starts to simmer vigorously, reduce the heat to medium and let it simmer for another 10 minutes. Approximately 15 minutes of simmering should be enough for the flavors to meld beautifully. Once cooked, remove and discard the green onion and onion pieces. (Tip: Adding whole garlic cloves while braising also makes them delicious!)
