  • 1/2 cup soy sauce (using a standard paper cup for measurement)
  • 1/2 cup sugar (using a standard paper cup for measurement)
  • 2 Tbsp dark soy sauce (e.g., ‘no-dou-yu’)

Cooking Instructions

First, cut the burdock root in half lengthwise to make peeling easier. Peel the skin thoroughly and rinse it under running water. It’s important to peel the burdock root as cooking with the skin on can leave behind dirt or impurities.

Cut the burdock root again into pieces about the thickness of a finger. This size is good for handling and ensures the pieces don’t break apart too easily during cooking.

Julienne the burdock root into strips about 1cm thick. Soak the julienned burdock root in cold water for about 15 minutes to remove any bitterness, then rinse and squeeze out excess water. This step helps to reduce the astringency and maintain a crisp texture.

Now, let’s prepare the delicious braising sauce. Using a standard paper cup for measurement, add 1/2 cup of soy sauce, 1/2 cup of sugar, and 2 tablespoons of dark soy sauce to a pot. The dark soy sauce will add a deeper color and a richer umami flavor.

Pour enough water into the pot with the seasonings so that the burdock root is just barely submerged. Bring the mixture to a boil over high heat. Once it starts boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 20 minutes. This slow simmering allows the flavors to deeply penetrate the burdock root.

If the sauce seems to be reducing too quickly and threatening to burn, feel free to add a little more water. Continue to simmer until the burdock root reaches a beautiful, glossy dark brown color. Once done, let it cool slightly before adding it to your gimbap for a perfect flavor addition.
