A Hearty Shabu-Shabu Delight Using Beef Bulgogi Cuts with Perilla Leaves
Our family absolutely loves shabu-shabu! Today, we’re making it extra special by rolling thinly sliced beef with fresh vegetables. It’s a delightful and satisfying way to enjoy this classic dish.
Main Ingredients- Fresh Beef (for Bulgogi) 800g
- Crisp Bean Sprouts 500g
- Fresh Napa Cabbage 1 head

Cooking Instructions
Step 1
First, let’s prepare a clear and flavorful shabu-shabu broth. In a large pot, pour in 2L of water and add 6 concentrated broth cubes. Bring it to a simmer over medium heat, allowing the broth cubes to fully dissolve and create a savory base. Once it starts boiling, reduce the heat to low and maintain a gentle simmer.
Step 2
Now, let’s prepare the fresh vegetables that will add vibrancy to our shabu-shabu. Thoroughly rinse the bean sprouts under running water and drain well. Cut the napa cabbage into bite-sized pieces. Trim the ends of the oyster mushrooms and enoki mushrooms and clean them. Keep all vegetables chilled to maintain their freshness.
Step 3
Here comes the star of today’s shabu-shabu: the beef rolls! Lay out the thinly sliced beef. Place a fresh perilla leaf on top. Arrange a portion of the prepared napa cabbage and crisp bean sprouts over the perilla leaf. Then, carefully roll the beef from one end to the other, tucking in the filling as you go. The subtle aroma of the perilla leaf will infuse into the beef and vegetables, enhancing the overall flavor.

Roll as many beef portions as you desire with the perilla leaves. You don’t have to roll all the beef; you can leave some slices as they are to enjoy as traditional shabu-shabu, dipping them directly into the broth. Rolling them makes for a beautiful presentation and a more substantial bite.

It’s time to add depth to the broth. Stir in 1 Tbsp of tuna extract and 1 Tbsp of soy sauce for soup into the simmering broth.
