Ingredients
- 1.5 bowls of cooked rice (warm)
- 5 strips of bacon (cut into bite-sized pieces)
- 1 ripe tomato (finely chopped)
- 1/4 red bell pepper (seeds removed and finely chopped)
- 1/4 onion (finely chopped)
- 1 Tbsp minced garlic
- 1 Tbsp curry powder
- 1/2 Tbsp rosemary (dried or fresh)
- 1/2 tsp salt
- Shredded mozzarella cheese, to taste
- A little fresh parsley, chopped (for garnish)
- A pinch of black pepper
Cooking Instructions
Step 1
Finely chop the onion, tomato, and bell pepper. Also, cut the bacon into bite-sized pieces. Having your ingredients prepped makes cooking much smoother.
Step 2
Heat a little oil in a preheated frying pan over medium heat. Add the chopped onion and sauté until it becomes translucent. Once the onion is softened, add the minced garlic and cook for about 30 seconds until fragrant. Then, add the cut bacon and stir-fry until it’s golden brown.
Step 3
Once the bacon has rendered some fat, add the chopped tomato and stir-fry for about 1 minute. The tomatoes will start to break down, releasing their delicious flavor.
Step 4
As the tomato releases its juices, add the curry powder, rosemary, salt, and a pinch of black pepper. Stir-fry for another minute, allowing the flavors to meld together beautifully.
Step 5
Now, add the 1.5 bowls of warm cooked rice to the pan. Stir and break up any clumps of rice with your spatula, ensuring it’s well combined with the other ingredients. Continue to stir-fry until the rice is evenly coated and heated through. Taste and add more salt if needed to adjust the seasoning.
