Main Ingredients- 3 strips bacon
- 4 eggs
Cooking Instructions
Step 1
First, prepare 4 eggs. Letting the eggs sit at room temperature for about 30 minutes before cooking will make them softer and easier to whisk. Fill a pot with enough water to cover the eggs, then add 1 teaspoon of vinegar and 1 teaspoon of salt. Once the water boils, add the eggs and boil for 8-9 minutes over medium heat. (Tip! Stirring the eggs in one direction while the water is boiling helps the yolk center beautifully, creating a more appealing rolled omelet.) Boil them to your preferred doneness, whether soft or hard-boiled. Immediately transfer the boiled eggs to cold water to cool, then peel off the shells.
Step 2
Once peeled, place the boiled eggs in a bowl and remove the chalazae (the white, stringy bits). Whisk them thoroughly with a fork or chopsticks until smooth, but don’t overmix. Lay out 3 strips of bacon side-by-side on a large plate or cutting board. Spread the whisked egg evenly over the bacon, gently shaping the edges so it doesn’t spread too much. Cover the bacon completely with the egg mixture. Since bacon is naturally salty, you don’t need to add any extra seasoning.
Step 3
Carefully roll the bacon and egg mixture tightly into a log. If you have a bamboo sushi mat, use it to roll tightly and shape the omelet for a neater finish. Heat a generous amount of cooking oil in a pan over low heat. Place the rolled omelet in the pan and gently cook, turning it frequently to ensure even browning on all sides. Once all sides are golden brown and the bacon looks deliciously crisp, it’s done. (Tip! Cooking slowly over low heat prevents burning and ensures the inside is cooked through.) Let it cool slightly before slicing into bite-sized pieces for a beautiful bacon rolled omelet!
