Step 1
Today, we’re going to make ‘Stir-Fried Eggplant’, a dish that’s savory and highlights the wonderfully soft texture of eggplant. It’s an ideal side dish for rice, loved by everyone, so please follow along!
Step 2
First, wash the eggplant thoroughly and slice it into bite-sized pieces (about 0.5cm thick, half-moon shapes). Thinly slice the onion and julienne the carrots. Finely chop the green onion. Heat a generous amount of cooking oil in a pan over medium heat. Add the sliced eggplant and onion and stir-fry until softened. The eggplant will absorb the oil and become tender.
Step 3
Once the eggplant and onion are somewhat cooked, add all the prepared seasoning ingredients. Combine 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp oligosaccharide (add more if you prefer sweeter), 1 tsp minced garlic, and 1 tsp red pepper flakes. Stir-fry quickly over medium-low heat until the seasoning coats the eggplant evenly. Be careful as eggplant absorbs seasoning well and can burn easily.
Step 4
To prevent the seasoning from burning and to add a bit of moisture, add about 1-2 tablespoons of water. Then, add the julienned carrots and chopped green onion. Stir-fry for just another minute until the vegetables are lightly cooked. Avoid overcooking, as this will make the vegetables mushy.
