First, prepare the dried seaweed. Place the dried seaweed in a bowl and pour warm water over it. Rehydrating with warm water helps it soak much faster, saving you time. Let it soak for about 5-10 minutes.

Once rehydrated, briefly blanch the seaweed in boiling water. Blanch for only about 30 seconds to 1 minute. This quick blanching makes the seaweed chewier and removes any fishy smell. Be careful not to overcook, as it can become mushy.

Immediately rinse the blanched seaweed under cold running water to wash off any slime. Squeeze out excess water thoroughly. Thinly slice half an onion. (The amount of seaweed should be enough to fill both your hands when squeezed dry, which is a good portion for about 2 servings).

In a bowl, combine 2 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp sugar, 1 Tbsp vinegar, 1 Tbsp soy sauce, 1 Tbsp sesame oil, 1 tsp minced garlic, and finally, a pinch of sesame seeds for added nuttiness. Using a standard rice spoon for measurements will make it even easier.

Place the prepared seaweed and sliced onions into a large bowl. Pour all of the prepared seasoning mixture over them. Be generous with the seasoning to ensure it coats everything well.
