Tteokbokki Ingredients

  • 20 rice cakes for tteokbokki (thaw if frozen)
  • 2 sheets of square fish cakes
  • 1/2 stalk of green onion

Broth Base

  • 3 cups of water

Cooking Instructions

Step 1

First, prepare the rice cakes. If using frozen tteokbokki rice cakes, rinse them under running water to thaw. Then, wash them in water for a chewier texture. Cut the square fish cakes into bite-sized pieces, and slice the green onion into roughly 5cm (2-inch) lengths. Prepare any desired additions like boiled eggs, various fried items, or dumplings that will make your soupy tteokbokki even more enjoyable.

Step 1

Step 2

Pour 3 cups of water into a wide pot and bring it to a boil over high heat. Once the water is bubbling vigorously, add the thawed rice cakes. Wait for the water to return to a boil after adding the rice cakes.

Step 2

Step 3

As the water starts to boil again, add 2 tablespoons of sugar. You can adjust the sweetness according to your preference. Stir well to dissolve the sugar.

Step 3

Step 4

When the broth is bubbling again, add 1 tablespoon of gochujang. Using a generous amount of gochujang will add a deep flavor to the tteokbokki.

Step 4

Step 5

Next, add 2 tablespoons of gochugaru (Korean chili flakes) to give it a spicy kick and a vibrant red color.

Step 5

Step 6

Finally, add 2 tablespoons of soy sauce and stir to combine all the seasonings until well dissolved. Let it simmer, allowing the seasonings to meld and the rice cakes to absorb the delicious flavors. Taste the broth at this point and adjust the sweetness or spiciness by adding more sugar, gochugaru, or soy sauce to suit your palate. If you have anchovy powder, adding about half a tablespoon will further enhance the umami of the broth.

Step 6

Step 7

Once the seasonings have mostly dissolved, add the sliced square fish cakes.

Step 7

Step 8

Simmering the fish cakes with the tteokbokki will release their savory flavor into the broth, making it richer and more delicious. The combination of chewy rice cakes and tender fish cakes is essential for great tteokbokki! Stir occasionally with a spatula to prevent the ingredients from sticking to the bottom and ensure the seasoning coats everything evenly.

Step 8

Step 9

Lastly, add the large pieces of green onion and simmer for a little longer to finish. The fragrant green onion will add another layer of flavor to your soupy tteokbokki.

Step 9

Step 10

Your delicious soupy tteokbokki, steaming hot, is ready! Enjoy it while it’s warm.
