After a busy morning of getting the kids ready and my partner off to work, I love to enjoy a leisurely brunch all to myself. Usually, a single side dish and some soup or stew would suffice, but today, I’m preparing a special meal just for me: the universally loved ‘Spam Mayo Rice Bowl’. It’s quick, flavorful, and guaranteed to make your mealtime more enjoyable.

  • Spam (large can): Approximately 1/4 can portion
  • Onion: 1/2
  • Eggs: 2
  • Cooked Rice: 1/2 bowl

First, prepare the Spam. Even though it’s for one person, I decided to use up the leftover Spam that’s too much to save. It’s about a quarter of a large can, perhaps a bit more. Cut it into bite-sized cubes, not too large. Pan-fry it over medium heat without any oil until golden brown. This method helps drain excess fat, making it lighter.

Thinly slice half an onion. Lightly oil a pan and sauté the sliced onions over medium-low heat. Once the onions become translucent, add 2 tablespoons of Tsuyu and continue to stir-fry. The umami from the Tsuyu will enhance the natural sweetness of the onions, creating a richer flavor. Once the onions are tender, remove them from the heat and set aside.

Now, let’s make the scrambled eggs. Crack 2 eggs into a bowl. Add a pinch of salt, a pinch of pepper, and 1 tablespoon of mirin to remove any eggy smell and add tenderness. Whisk well. Heat a pan over medium heat, pour in the egg mixture, and stir with chopsticks until soft curds form, creating scrambled eggs. If you’ve reached this point, you’re almost done! Isn’t it incredibly simple?

Now it’s time to beautifully arrange all the ingredients on top of the rice. Start by placing half a bowl of warm cooked rice into a slightly deep bowl. Surround the rice with the scrambled eggs you just made, creating a visually appealing presentation.

Generously layer the glistening onions, stir-fried in Tsuyu, over the rice. Then, artfully arrange the golden-brown Spam on top. I thought the Spam amount might be a bit much initially, but it seems to complement the rice well! (If you have a lot of Spam left over, you can set it aside for other dishes.)

Here comes the highlight of the Spam Mayo Rice Bowl – drizzling the mayonnaise! Transfer the mayonnaise to a small squeeze bottle or piping bag and artistically drizzle it over the rice and toppings in a zig-zag pattern or concentric circles. You can create a net pattern or any freeform design according to your preference for a truly personalized bowl. The way you drizzle can completely change the final look!

Finally, finish your Spam Mayo Rice Bowl by sprinkling a pinch of parsley flakes over the top. The green parsley adds a vibrant touch and enhances the appetite appeal. If you don’t have parsley, finely chopped green onions or red bell peppers can also serve as attractive garnishes.
