Delicious and Easy Chives Japchae

This recipe introduces a delicious Japchae that anyone can easily follow, using chives from the refrigerator. The combination of abundant vegetables, chewy glass noodles, and tasty beef creates a special meal that the whole family can enjoy.

Main Ingredients

  • 250g Chives
  • 1.5 Onions
  • 5 Shiitake Mushrooms
  • 2/3 Carrot
  • 300g Beef (Bulgogi-cut recommended)
  • 250g Glass Noodles

Cooking Instructions

First, wash the chives thoroughly and cut them into four equal lengths. Cutting them into manageable pieces will make them easier to eat.

Slice the onions into thin strips. Remove the tough stems from the shiitake mushrooms and slice them thinly. The shiitake mushrooms will add a wonderful depth of flavor to your Japchae.

Julienne the carrot. The vibrant orange color of the carrots will make the Japchae visually appealing.

Pat the beef dry with paper towels to remove excess moisture. In a bowl, combine the beef with 2 Tbsp soy sauce, 1 Tbsp sugar, a pinch of black pepper, 1 Tbsp minced garlic, and a pinch of minced ginger. Mix well. Marinating the beef beforehand makes it much more tender and flavorful.

Heat a little oil in a pan over medium-high heat. Stir-fry each vegetable (onions, shiitake mushrooms, carrots) separately, adding a pinch of salt to each as you go. Stir-frying the carrots separately prevents their color from bleeding into the other ingredients. Cook the vegetables just until they are slightly tender and their vibrant colors appear. (Tip: You can actually stir-fry all the vegetables together in one pan, except for the beef!)

In the same pan, add the marinated beef over high heat and stir-fry quickly until cooked through. Since the beef is already seasoned, no additional salt is needed. Break up any clumps of beef as you cook to ensure even cooking.

Soak the glass noodles in cold water for about 30 minutes until softened. Once soaked, drain them and boil in simmering water for approximately 2 minutes. Be careful not to overcook, as they can become mushy. Drain the cooked noodles in a colander; rinsing with cold water is not necessary. (Tip: If you don’t have time to soak the noodles, you can boil them directly from dry, but cook them for a slightly longer period.)

In a large pan or wok, combine the stir-fried vegetables, cooked glass noodles, and cooked beef. Stir-fry everything together. Ensure the pan is well-heated to prevent the ingredients from sticking.

Continue stir-frying for about 1 minute, allowing the flavors to meld. Then, add the prepared chives to the pan and gently toss them in.

The chives might seem bulky at first, but they will quickly wilt and integrate with the other ingredients with a few stirs. Cook the chives briefly to retain their freshness and prevent them from becoming watery.

Finally, add 2-3 Tbsp soy sauce, 1-2 Tbsp sugar, and 1-2 Tbsp sesame oil. Toss everything together until well combined and the seasoning is evenly distributed. Taste and adjust the soy sauce, sugar, and sesame oil according to your preference. Add more soy sauce if it’s too bland, more sugar for extra sweetness, and more sesame oil for a richer aroma.
