Ingredients

  • 1 whole Soy Marinated Crab (Ganjang Gejang)
  • 1 Marinated Shrimp (peeled, head squeezed)
  • 1 Egg Yolk
  • 1 Tbsp Chopped Scallions
  • 1 tsp Sesame Oil
  • 1 tsp Toasted Sesame Seeds
  • 1.5 bowls Warm Cooked Rice

Cooking Instructions

Step 1

First, prepare one whole soy-marinated crab. Carefully scrape out all the rich roe and innards from the shell using a spoon or chopstick and set aside. Extract the meat from the crab body by gently pressing or squeezing. For the legs, use kitchen scissors to cut them open and extract all the meat inside. Autumn crabs, in particular, have very plump meat even in their thin legs, so don’t discard them! Cut them open with scissors to get all the meat. Gather the extracted crab meat and roe. Add a little bit of the soy marinade from the crab to season the mixture. While extracting the meat can take some time, this step is crucial for completing the delicious rice bowl.

Step 1

Step 2

In a large bowl, place 1.5 bowls of warm cooked rice. It’s best to use a slightly larger portion than a standard single serving. This is because the extracted crab meat and roe are already seasoned with the soy marinade, ensuring the perfect flavor balance when mixed with the rice. It’s similar to how you’d want more rice when eating plain soy-marinated crab.

Step 2

Step 3

Place the peeled marinated shrimp in the center of the rice. Gently squeeze the head of the shrimp to extract its savory innards, then place it on top of the rice. Next, arrange the extracted soy-marinated crab meat, roe, and a little bit of the marinade around the shrimp on the rice.

Step 3

Step 4

Sprinkle the chopped scallions evenly over the crab meat and roe. If you enjoy a bit of spice, you can also finely chop and sprinkle some spicy green chili peppers (like Cheongyang peppers) at this stage. The sharpness of the scallions and the heat from the chili will enhance the overall flavor of the rice bowl.

Step 4

Step 5

Finally, gently place the egg yolk in the center of the toppings. Drizzle with 1 teaspoon of sesame oil and sprinkle with 1 teaspoon of toasted sesame seeds. Your enticing ‘Ganjang Gejang Deopbap’ is now ready! Mix everything together and enjoy it wrapped in warm, crispy roasted seaweed. It’s an absolutely divine experience!
