Main Ingredients

  • Smoked salmon 90g (adjust quantity to your preference)
  • Onion 1/2 medium (finely chopped or thinly sliced)
  • Cheongyang chili pepper 1 (seeds removed and finely chopped for a spicy kick)
  • Pickled radish (Danmuji) (finely chopped for a tangy crunch)
  • Radish sprouts (a small amount, for fresh aroma and crisp garnish)

Special Sake-Don Sauce

  • Soy sauce 4 Tbsp (the base of umami)
  • Oligosaccharide 4 Tbsp (for sweetness and a glossy finish)
  • Water 50ml (to prevent burning and ensure tender simmering)

Cooking Instructions

Step 1

Begin by thoroughly washing and preparing all the ingredients for your Sake-Don. Thinly slice or finely chop the onion. For the Cheongyang chili pepper, remove the seeds and mince it finely; this will help it blend beautifully into the sauce, adding a pleasant spicy note. Chop the pickled radish into bite-sized pieces.

In a small pot, combine 50ml of water, half an onion (thinly sliced or chopped), 4 Tbsp of soy sauce, 4 Tbsp of oligosaccharide, and 1 finely chopped Cheongyang chili pepper. Bring this mixture to a gentle simmer over medium-low heat for about 5-7 minutes, or until the onions become translucent and tender. This simmering process will infuse the sauce with a deep and rich flavor profile.

Spoon some freshly cooked white rice into your serving bowl. Drizzle a generous amount of the simmered onion and soy sauce mixture over the rice. Allowing the warm rice to absorb some of the sauce will enhance its deliciousness and aroma.

Now, artfully arrange the star of your dish – the smoked salmon – on top of the sauced rice. You can gently rinse the smoked salmon under cool water and pat it dry before arranging. Lay the slices neatly, overlapping them slightly or rolling them up, to create an appealing presentation.
