Ingredients

  • 1/5 portion Daikon radish (approx. 200-250g)
  • 1 Tbsp Saeujeot (fermented salted shrimp)
  • 3 Tbsp Perilla oil
  • 4-5 cups Water (800ml – 1000ml)
  • 1 Tbsp Fish sauce
  • 2 Tbsp Soy sauce
  • 0.5 Tbsp Minced garlic
  • 1 stalk Green onion

Cooking Instructions

Step 1

First, prepare 1/5 of a Daikon radish (about 200-250g). Peel the skin cleanly and julienne it thinly. Slicing it thinly, almost like sharpening a pencil, helps the flavor infuse well into the broth. Keep 1 tablespoon of Saeujeot (fermented salted shrimp) ready. Saeujeot plays a crucial role in adding umami to the soup.

In a pot with some depth, generously drizzle in 3 tablespoons of perilla oil. The nutty aroma of the perilla oil will blend with the radish, creating a deep flavor.

Add the julienned radish to the pot and stir-fry over medium heat until it starts to turn translucent. Stir-frying brings out the natural sweetness of the radish.

Once the radish is somewhat softened and translucent, add 1 tablespoon of Saeujeot and stir-fry together. The salty flavor of the Saeujeot will penetrate the radish, adding savoriness, and continue to stir-fry until the radish becomes even more transparent. Be careful not to burn it.

When the radish is sufficiently stir-fried and begins to look translucent, add 2 cups (400ml) of water. Stir-frying before adding water helps to deepen the flavor of the broth.

Add 1 tablespoon of fish sauce here. Fish sauce helps to season the soup and adds more umami.

Add 2 tablespoons of soy sauce to balance the overall flavors.

Add 0.5 tablespoon of minced garlic, and bring to a boil over high heat, allowing the ingredients to simmer and reduce, ensuring all the seasonings blend well. Starting on high heat helps to concentrate the flavors.

Add the remaining 2-3 cups (400ml – 600ml) of water. Adjust the amount of broth according to your preference. If you prefer a clearer, more refreshing soup, add a bit more water.
