When you’re craving something spicy, elevate your instant ramen with this recipe! By adding fresh onions and fragrant scallion oil, you can achieve a much deeper and richer flavor. It’s simple enough for anyone to follow, transforming an ordinary ramen into a gourmet experience in minutes!
Ramen Ingredients- Instant ramen with liquid soup base (2 packs)
- Olive oil (1-2 Tbsp)
- White part of green onions, 1 handful (about 50g)
- Minced garlic, 2 blocks (about 1 Tbsp)
- Gochugaru (Korean chili powder), 1 tsp
- 1 medium onion
- A pinch of black pepper
Cooking Instructions
Step 1
Heat 1-2 tablespoons of olive oil in a pot over low heat. Add the chopped white parts of the green onions and slowly sauté until fragrant and lightly golden, creating a flavorful scallion oil.
Step 2
Once the scallion aroma is prominent, add 2 blocks (about 1 Tbsp) of minced garlic. Sauté together until fragrant, being careful not to burn the garlic. Keep the heat on low.
Step 3
When the garlic is fragrant, add 1 tsp of gochugaru (Korean chili powder). Stir quickly to infuse the oil with chili flavor. **Important: Gochugaru burns easily, so immediately reduce the heat to low and stir for about 10 seconds to prevent bitterness.**
Step 4
Add a pinch of black pepper to enhance the aroma, if desired. Be mindful not to add too much, as it can make the soup overly spicy.
Step 5
Add the liquid soup base from the ramen packet into the pot with the sautéed aromatics and oil. Stir and cook briefly; this step helps the soup base coat evenly in the oil, creating a deeper flavor.
Step 6
Continue to stir-fry over low heat for about 30 seconds to 1 minute, allowing the soup base and aromatics to meld together. Stir gently to prevent sticking.
Step 7
Pour in the amount of hot water specified on the ramen package. Using boiling water will speed up the cooking process.
Step 8
Add the dried vegetable mix (soup sachet) from the ramen package and stir to distribute.
Step 9
Bring the broth to a rolling boil over medium-high heat. Prepare to add the noodles.

Add the ramen noodles to the boiling broth. Cook according to the package instructions or until they reach your desired tenderness.

About halfway through the noodle cooking time, add 1 thinly sliced onion to the pot. The onion will soften and impart a lovely sweetness to the broth, further enhancing the ramen’s flavor.
Step 12
Continue to boil for another 1-2 minutes, or until the noodles are fully cooked and the onion slices are translucent. Adjust the heat as needed to prevent the broth from reducing too much.
Step 13
Ladle the finished Onion Ramen into a bowl and serve immediately while hot. For an extra touch, consider adding a soft-boiled egg or fresh green onions.
