  • Anchovy sauce 2 Tbsp
  • Mirin (cooking wine) 1 Tbsp
  • Brewed vinegar 1/2 Tbsp
  • Minced garlic 1/3 Tbsp
  • Doenjang (fermented soybean paste) 1/4 Tbsp
  • Sesame oil 1 Tbsp

First, combine all the ingredients listed under ‘Special Seasoning Mix’ in a small bowl and mix well. Using medium-grind gochugaru, rather than very fine or coarse, will help achieve both color and flavor without grittiness.
