Tteokbokki Ingredients

  • 8 sheets of dried kelp (for broth)
  • 2 cups tteokbokki rice cakes (approx. 300g)
  • 1 stalk of green onion
  • 3 hard-boiled eggs

Spicy & Sweet Sauce

  • 3 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp soy sauce
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 3 Tbsp sugar
  • 1 Tbsp cooking oil

Cooking Instructions

Step 1

First, gather all the ingredients for your Tteokbokki. Prepare 8 sheets of kelp, 2 cups of tteokbokki rice cakes, 1 stalk of green onion, and 3 hard-boiled eggs. For the sauce, mix 3 Tbsp gochujang, 3 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 3 Tbsp sugar, and 1 Tbsp cooking oil.

In a pot, add 5 cups of water and 8 sheets of kelp to make a kelp broth. Once the water boils, remove the kelp and set it aside; don’t discard it, as we’ll use it later. This kelp broth will add a deep umami flavor to your tteokbokki.

To ensure soft and chewy tteokbokki, rinse the rice cakes under cold water. If your rice cakes are hard, you can blanch them in boiling water for a minute to soften them before proceeding.

Heat 1 Tbsp of cooking oil in a frying pan over low heat. Add 1 Tbsp minced garlic, 3 Tbsp gochujang, 1 Tbsp gochugaru, 3 Tbsp soy sauce, and 3 Tbsp sugar. Stir well.

Sauté the sauce ingredients over low heat to prevent burning. Stir-frying the sauce beforehand will create a richer and more profound flavor. Cook for about 1-2 minutes to release the aromas.

Pour the prepared kelp broth (5 cups) into the pan with the sautéed sauce. Add the softened tteokbokki rice cakes and the 3 hard-boiled eggs. Bring to a boil and cook until the rice cakes are tender and well-coated in the sauce. You can also add the reserved kelp, thinly sliced, for added chewy texture and depth of flavor. Simmer for about 5-7 minutes, or until the rice cakes are soft.

Finally, add the sliced green onion (1 stalk) to the pot and let it simmer for another minute or two. The green onions will add a refreshing note to the broth and a fragrant aroma. Cook for an additional 1-2 minutes after adding the green onions.
