Deep and Heartwarming Beef Bone Broth Seaweed Soup
A Culinary Tribute to the Esteemed Song Hae by Lee Chan-won
In the summer special of the TV show ‘Pyeonstorang,’ trot singer Lee Chan-won prepared a birthday lunchbox for his most respected figure, Song Hae. This recipe follows his heartwarming creation of a rich beef bone broth seaweed soup and a savory radish green soybean paste stew. This soup, made with a deeply flavorful beef bone broth, offers a comforting and nourishing experience.
Beef Bone Broth Seaweed Soup- 1 cup dried seaweed (rehydrated and drained)
- 2 tablespoons perilla oil (deulgireum)
- 150g beef (for soup, cut into bite-sized pieces)
- 1L beef bone broth (sahgwal yuksu)
- 1 tablespoon soy sauce for soup (ganjang) or to taste
- A pinch of salted shrimp (saeujeot) or salt for seasoning
Radish Green Soybean Paste Stew (A Perfect Companion)- 200g rehydrated radish greens (siraitgi), cut into manageable pieces
- 2 tablespoons perilla oil (deulgireum)
- 100g beef (ground or for soup, cut into bite-sized pieces)
- 1 cup beef bone broth (sahgwal yuksu)
- 1/2 onion, thinly sliced
- 1 red chili pepper, diagonally sliced
- 1 green chili pepper, diagonally sliced
- 1 tablespoon soybean paste (doenjang)
- 2 tablespoons gochugaru (Korean chili flakes)
- 2 tablespoons minced garlic
- A pinch of toasted sesame seeds (for garnish)
- 200g rehydrated radish greens (siraitgi), cut into manageable pieces

Cooking Instructions
Step 1
[Beef Bone Broth Seaweed Soup] First, in a pot, combine the rehydrated seaweed with 2 tablespoons of perilla oil. Sauté over medium heat for 3-5 minutes until the seaweed becomes tender and fragrant. This step is crucial for bringing out the umami of the seaweed.
Step 2
Once the seaweed is well sautéed, add the 150g of beef. Continue to stir-fry until the beef is no longer pink. As the beef cooks, it will meld with the seaweed, enhancing the depth of flavor.
Step 3
After sautéing the beef, pour in 1L of warm beef bone broth. Bring it to a boil over high heat, then reduce the heat to medium-low. Simmer for another 10-15 minutes, allowing the seaweed and beef to absorb the rich broth flavor. Finally, season with soy sauce for soup and salted shrimp (or salt) to taste. Using salted shrimp can add an extra layer of savory depth.
Step 4
[Radish Green Soybean Paste Stew] Prepare another pot or a wide pan. In a bowl, combine the 200g of rehydrated radish greens, 1 tablespoon of soybean paste, 2 tablespoons of perilla oil, 2 tablespoons of gochugaru, and 2 tablespoons of minced garlic. Mix well with your hands until evenly coated. Let it marinate for a bit to allow the flavors to meld.
Step 5
In the pan, heat 1 tablespoon of perilla oil over low heat. Add 1 tablespoon of minced garlic and sauté until fragrant. Then, add the 100g of beef and stir-fry until it loses its pink color.
Step 6
Once the beef is cooked, add the marinated radish greens, sliced onion, diagonally sliced green and red chili peppers to the pan. Stir-fry over low heat until the radish greens soften and the ingredients become tender. It’s important to let them cook until they are well-integrated and softened. Covering the pan and simmering gently will ensure a tender result.
Step 7
When the radish greens are sufficiently cooked, add just enough beef bone broth (about 1 cup) to create a stew-like consistency. Adjust the final seasoning with soy sauce for soup. Avoid overcooking at this stage; the goal is to preserve the fresh flavors of the ingredients.
Step 8
Transfer the finished radish green soybean paste stew to a serving dish. Garnish generously with toasted sesame seeds for a final touch. Served alongside the warm beef bone broth seaweed soup, this creates a truly satisfying and wholesome meal.
