  • 3 Castella cakes (approx. 2cm thick)
  • 2 packets instant coffee (e.g., Maxim coffee)
  • 150g heavy cream (cold)
  • 120g granulated sugar
  • 100g Mascarpone cream cheese (room temperature)

First, slice the Castella cakes into uniform pieces about 2cm thick. Ensuring an even thickness is key for consistent texture, as overly thick or thin slices can alter the final result.

Arrange the sliced Castella pieces snugly in the bottom of your serving dish, filling any gaps. This creates a solid base that will absorb the coffee syrup evenly and give the tiramisu its structure.

Prepare the coffee syrup by dissolving 2 packets of instant coffee in 10 tablespoons (100ml) of warm water. For a balanced flavor, I mixed sweet and mild Americano packets. Feel free to use your preferred instant coffee or a shot of espresso.

Using a pastry brush, generously but evenly coat the Castella layers with the prepared coffee syrup. Avoid oversaturating, which can make the cake soggy. Gently dab the syrup onto the cake to help it absorb.

In a large bowl, combine the cold heavy cream and 120g of granulated sugar. Whip until the mixture reaches about 30% consistency – just slightly thickened. You can add more sugar to your taste if you prefer a sweeter dessert.

Add the room-temperature Mascarpone cream cheese (100g) to the whipped cream. Continue whipping gently until the mixture reaches about 60% consistency, ensuring the cream cheese is smoothly incorporated without lumps.

For a more intense coffee flavor, you can mix a small amount of the leftover coffee syrup (1-2 tablespoons) into the cream mixture and whip to about 80% consistency. The cream should hold soft peaks that just start to disappear. If you prefer to strongly savor the pure cream cheese taste, you can skip this step.

Carefully spread the luscious cream mixture evenly over the coffee-soaked Castella layers. Ensure complete coverage for a uniform taste and appearance throughout the tiramisu.
