  • 180g granulated sugar
  • 3 large eggs, at room temperature
  • 240g cake flour, sifted
  • 6g baking powder
  • 5g vanilla extract
  • 10 Oreo cookies (cream removed)
  • 6 Oreo cookies for topping (cut in half)
  • 90ml milk

Begin by ensuring your unsalted butter is softened to room temperature, making it pliable and easy to cream. Cold butter won’t incorporate well, so plan ahead.

Using a whisk or electric mixer, beat the softened butter until it becomes light and fluffy, resembling pale yellow cream. Incorporating air at this stage will help create a wonderfully tender muffin.

Add all the granulated sugar to the butter and continue to beat until the mixture is well combined, the sugar is mostly dissolved, and the color lightens to an ivory hue.

Gradually add the room temperature eggs, one at a time, beating well after each addition to ensure they are fully incorporated. Adding them too quickly can cause the batter to curdle, so be patient and add them in stages.
