  • 70g granulated sugar
  • 65g grapeseed oil
  • 150g cake flour
  • 7g cocoa powder
  • 3g baking powder
  • 70g milk
  • 80g dark coating chocolate
  • Chocolate crunch sprinkles (for topping)

Begin by cracking the fresh egg into a bowl. Whisk it gently until slightly frothy. Then, add the granulated sugar and continue to whisk until the mixture is well combined and turns a pale, creamy color. The sugar should be mostly dissolved, creating a smooth base.

Next, pour in the grapeseed oil and whisk until it’s fully incorporated into the egg and sugar mixture. In a separate bowl, combine the cake flour, cocoa powder, and baking powder. Sift these dry ingredients together to ensure there are no lumps and to aerate them. This step is crucial for a tender doughnut.

Add the sifted dry ingredients to the wet ingredients, along with the milk. Gently mix everything together using a spatula or whisk until just combined. Be careful not to overmix, as this can lead to tough doughnuts. Transfer the batter to a piping bag. Fill your doughnut molds to about 80% capacity, leaving some room for them to rise during baking.

Once your doughnut molds are filled, place them in a preheated oven at 180°C (350°F). Bake for approximately 15 to 17 minutes. You can check for doneness by inserting a skewer or toothpick into the center; it should come out clean. Adjust the baking time slightly based on your oven’s performance.

After baking, remove the doughnuts from the oven and let them cool slightly. While they’re cooling, prepare the chocolate coating. Place the dark coating chocolate in a heatproof bowl set over a saucepan of simmering water (double boiler method). Stir gently until the chocolate is completely melted and smooth. Once melted, dip the top of each cooled doughnut into the melted chocolate, letting any excess drip off. Immediately sprinkle the chocolate crunchies over the wet chocolate to create a delightful topping. Your homemade chocolate doughnuts are now ready to be enjoyed!
